Golden Coconut Almond Muffins
Oh my gosh, these are SO good! At first I thought it was odd that the recipe didn't call for any eggs, but I didn't miss them in the finished product. I did make a few changes: I didn't have orange juice, so I used extra coconut milk, as some other reviewers suggested. I left out the orange zest since I didn't have that either, and I used some mashed fresh mango instead of most of the oil. (I can't really taste the mango in the finished product, but at least I know the muffins are healthier!) I made sure to toast both the almonds and grated coconut, and I also used about 3/4 cup almond flour and a few Tbsp. ground flax seed in place of some of the all-purpose flour. These are some of the best muffins I've ever had - the recipe is a definite keeper!

Peanut Butter Bars IV
I love this recipe, though I agree with what others said about it not fitting in such a big pan. I used a 9"x9" pan and it was just right. I left out the chocolate chips and instead used some boxed chocolates we had gotten for Christmas that had partially melted and re-solidified, so they didn't look nice enough to serve to company anymore. I pressed the chocolates into the dough after it was in the pan so they'd be evenly spaced, and tried to mostly bury them in the peanut butter mixture. The result, I have to admit, was unusual, but our family and guests all enjoyed it. With each bite you never knew what kind of chocolate you were going to find! I named the dish "Buried Treasure", but my husband called it "Land Mine Surprise", and of course that was the name that stuck!

Creamy Meat-Stuffed Zucchini
This was delicious, and less trouble to prepare than I had feared. Next time I might increase it to three zucchinis, because there was way too much filling to fit in two. I guess it didn't matter that it overflowed, though. I'm wondering if I could use sour cream or plain yogurt instead of milk for a more stroganoff-like taste. Mushrooms would be a tasty addition too. I'll try that the next time I find zucchini (it isn't easy to come by in Taiwan where I live).
