About this Cook
I am an EMT but I am studying to be a Chef and will be receiving an associates degree in Culinary Technology. I have a love of food history. many family traditions revolve around food and and celebrating with food, especially in the south, where I'm from. I like listening to people talk about dishes that their families make and the memories that it evokes.
My favorite things to cook
Seafood any kind any style, pasta dishes, anything new. I like to think outside the box and try different ingredient combinations to create things that are uniquely me. I like cooking wild game and I pride myself on my butchering skills.
My favorite family cooking traditions
During the holidays, our tradition is to not be traditional. Christmas day is for firing up the grill for a nice Ribeye, not ham or turkey. We like casual dinning without the worry of what the norm can bring.
My cooking triumphs
I finally mastered bread making without the use of a bread machine. Baking is not my favorite thing to do in the kitchen but I kept at it til I was finally comfortable and satisfied with my product.
My cooking tragedies
Over steaming the most beautiful oisters from an area in Carolina called Stumpy Point. These oisters have a wonderful saltiness and an aroma of nothing but ocean, without that muddy taste that this variety usually has, and I ruined them.

Fish Stew
I live in Eastern Carolina and many elements that are traditional are missing and affect the flavor. Bacon is a must and true fish stew is actually a stoup that is layered and simmered very slowly for a few hours not a few minutes. Trust me. I've lived near the coast all my life
