Roasted Pork Loin

This was so good! Though I have been cooking many years, I am usually afraid to roast meat as it is so easy to overcook. Juicy and delicious, and so easy. My family loved it!

Tofu Cheesecake

Based on previous reviews: I cut the sugar to 3/4 c., tripled the amount of vanilla, added 2 eggs and 2 T tapioca flour. I got it smooth using a hand blender. It took a little over an hour to bake. Pretty good, but needed strawberry topping to hide the slight tofu flavor. My picky dairy-free son did like it, and he LOVES (and misses) real cheesecake, so thank you!

Pecan Pie V

Great recipe--thanks! I reduced the brown sugar to 3/4 c. and baked at 350 the first 15 min., then 300 for 50 min. as others suggested. Perfect and so yummy! (I always cover the crust edges with tin foil til the last 10-15 min.) I used almond milk and ap gf flour and it was fine.

All-Day Apple Butter

This is a great idea. I made it with no sugar, no added sweeteners, but used a variety of mostly sweet apples. I made a much smaller batch, and it worked fine. I had to add water a couple of times, and did not need to uncover. I used a hand blender at the end to get the right consistency. So good and easy.

German Pancakes II

I make this all the time. I usually add cinnamon, nutmeg, vanilla, and a thinly sliced apple or two. Serve with or without powdered sugar and a squeeze of lemon. No syrup needed.

Five Minute Ice Cream

Wonderful! Thank you! Never would have thought of using the food processor but it works fine. Easier than scraping it out of a blender. Great for special diets--just adjust the ingredients to your needs.

Paleo One Minute Muffin

So easy! Worked perfectly. Super low-carb & gluten-free. Thanks!!! UPDATE: These are fantastic! I eat them every day. That much flax is hard on my system, tho, so I subbed 1 T white chia seed meal for 1 of the T flax. Works great.

Butternut Squash Soup

This is delicious! I do not normally like squash but love this soup. Fantastic! Used butter, chicken stock, less cream cheese (only 4 oz.), and baked the squash. Easy. Best soup recipe I have. Thanks!

Quick Almond Flour Pancakes

I give this recipe five stars because of its tremendous value in being simple, gluten-free, and low-carb (if you sub for the syrup). The recipe does work, and the pancakes do taste good. I left out the sweetener and it probably really needs some. I will add stevia next time. Also I would add vanilla or almond extract next time as others suggested. Thank you Allie!

Flourless Chocolate Cake II

This is not my very best flourless chocolate cake recipe, but it is good, simple, and all the ingredients are on hand. My kids loved it. For the semisweet chocolate I used 3/4 c. chocolate chips. As one reviewer suggested, I melted the chips & butter in a glass 4-cup measuring cup then just added the rest & mixed it together in that. It made it easy to pour into the muffin pan. I used a silicone 12-cup muffin pan, set on a baking sheet for stability. I lightly oiled the muffin cups, baked about 20 minutes, then took them out of the oven and let them rest in the pan 10 minutes. It worked great. Thanks! UPDATE: This cake is MUCH better thoroughly chilled, the next day.

Neapolitan Cookies I

I made these with all-purpose gluten-free flour and 1/2 the sugar. The results were very good but pretty fragile--I had to let them cool completely on the baking sheet and then they were easier to handle. Next time I will use 1/2 the salt if I leave out that much sugar. Also I will add 1 t. xanthan gum to help it hold together. To spread the dough in the pan, I wet my hands and formed it into a flattened oblong shape, then laid in in the pan and pressed it to the edges. Like others, I used cocoa. For the white layer I just added 2 T ground almonds. For the pink layer I used 1 T strawberry jam & 2 drops red food coloring. Very good & fun recipe!

Baked Split Chicken Breast

Easy and delicious. The chicken was moist and tasty--perfect! Based on other reviews I cooked it for an hour at 375 (these breasts were fairly large) and it was not overcooked at all.

Make-Ahead Vegetarian Moroccan Stew

I have to disagree with most reviews here. The spices were tasty, but I felt the kale and lentils muddied it up. I may try it again without them. Didn't have apricots so I used raisins. Just didn't come together for my family's tastes, even after a night in the fridge.

Easy Shake and Bake Chicken

Fantastic! I used fresh boneless skinless breasts. They were pretty big so I cut them in halves. They were done perfectly in exactly 1/2 the time (20 minutes total). I used 1/2 olive oil 1/2 butter and brown rice flour (to be gluten free). Other GF flours would work as well, however they did not have a thick, crunchy crust, but were still delicious! And so easy! Be sure to drizzle that good juice over the chicken when serving. UPDATE: Tried this with white cornmeal instead of rice flour and it was crispier and better. I'm guessing yellow cornmeal would work too.

Italian Potato Salad

I do not always measure when I cook. I used these basic ingredients in their approximate proportions and it was fantastic! I used apple cider vinegar and added salt and pepper. We ate it warm. So good!

Low Carb Cauliflower Leek Soup

GLUTEN FREE OPTION: I made this using all-purpose gluten-free flour and added 1 tsp. xanthan gum...Came out fantastic!!! I also threw in about 1 T cocoa and tsp. vanilla, based on reviews. Very good recipe!
