Salsa Chicken Burrito Filling

Reviewed: Sep. 26, 2010
Add stop-light peppers, low-carb tortillas, low fat cheddar and low or non-fat sourcream and you've got a complete-with-veggies healthy fajita meal.

Spring Vegetable Soup

It's good. And *SO* close to vegetarian, why not use vegetable broth? Nextime, I'm adding chicken! ;-)

Bubba's Jambalaya

Reviewed: Oct. 28, 2009
This is a hearty, childhood, comfort food. I made no changes and it's likely I never will. My only comment: DON'T BUY OR USE PRE_COOKED SHRIMP. EVER!

Big John's BBQ Ribs and Dry Spice Rub

Reviewed: Oct. 28, 2009
Big John, I shamelessly stole your dry rub and adjusted it to make my own. Thank-you, Sir!

My Mrs. thought it was going to be too weird with the curry. She's now a believer.

Baked Garlic Parmesan Chicken

Very good. Very quick and easy. Quicker still with chicken tenderloins. The recipe divides well, too.

Baby Back Ribs

Reviewed: Oct. 28, 2009
I can't say I made thes as directed because I'm just too picky about my sauces to use anything from a bottle. But I have definitely adopted the method. Before baking I use my own dry rub. After baking I toast them under the broiler for a few minutes, slather on my own sauce, and toast them a second time. Everyone I've made them for can't believe how simple it is considering the results. Thanks for the inspiration!

Crunchy Catfish Nuggets

Reviewed: Jun. 17, 2009
I've made this more than once now, and I really like it. But my Mrs. isn't a fish fanatic like I am, so to help cut down on the fishiness, I give the catfish a 20-30 minute soak in buttermilk before continuing witth he rest of the recipe. I don't know why, but it does seem to work!

Italian Sausage Jambalaya

Reviewed: Jun. 17, 2009
I enjoyed this. But it's closer to a gumbo than a jambalaya. (Picky, picky...)

Oven Fried Potatoes II

Reviewed: Jun. 17, 2009
This works. It also lets me do another dish under the broiler while these finish, or just to keep them hot.

Black Beans and Rice

Soul food that takes me back to my childhood. Simple, easy, and very satisfying. For a difference, add ham, or bacon, or ground beef, or chicken, or shrimp, or NOTHING! ;-)

Authentic Louisiana Red Beans and Rice

Reviewed: Jun. 17, 2009
This is a good recipe that I'll adjust and make again. There's a *LOT* of confusion, but kidney beans and red beans are technically two different animals. Red beans are the smaller of the two, and (IMHO) more flavorful than the common kidney bean.

Good, but not great. Good enough that I'll make it again and try to get it to come out more "traditional." Thanks for submitting it!

BBQ Dry Rub

This is good enough like it is, that I've adopted it and adapted it with my own touches to make it my own: Garlic, onion, and chipotle powders. YUM!!!

Baked Teriyaki Chicken

Reviewed: May 18, 2009
Very, very good. Now one of my Wife's favorites. Ordinarily, I highly disapprove of folks rating a recipe with a dozen or more of their own alterations. A recipe should stand on its own merit. In this case, I made an exception. With the cider vinegar (brown) and the soy sauce (brown), I felt it just naturally called for brown sugar. Not that it make a huge difference, but it adds a subtle richness that I prefer.

Really, really good. Elegantly simple, fast to prep, etc... Next time, I may just separate all the pieces so each will absorb more of the yummy sauce.

Bacon Wrapped Barbeque Shrimp

Elegantly simple with limitless possibilities, and very tasty. Works well under the broiler, too. Precook the bacon to avoid overcooking the shrimp.
