Dump Cake IV

This is a great recipe! My mom used to make this for me when I was little (without the pineapple), and sometimes she would use blueberry pie filling instead of cherry filling. I don't recommend using a metal 9X13 pan if you plan to store the leftovers in the pan - the acids in the pineapple start to corrode the pan! Use a 9X13 glass baking dish instead. Great recipe!

Broiled Tilapia Parmesan

This is AMAZING, as is - no changes. Very easy, and VERY quick. 6 minutes total cooking time - who can beat that??? I love how tilapia is not very fishy, and in this recipe, it is full of flavor and very tender. I will make this again in a heartbeat! And very low carb is a plus (0.6g per serving!

Chocolate Covered Strawberries

What a great, easy, fun recipe! I used a pkg of milk chocolate chips and almost 1 T of shortening. I melted the shortening in the microwave for about 30 seconds to melt it, then added the chocolate chips. I cooked it on 70% power for 1 minute then stirred it and it was perfect. I loved the toothpick on styrofoam idea! I used the leftover chocolate to dip animal crackers for the kids. Thanks for this recipe!

Chicken Pot Pie IX

My very picky family loved this! I would maybe consider adding a bit more salt, but salting at the table is just fine. I would also mix it all together gently before pouring it into the pie shell. Put a baking sheet under the pie while it bakes. I used two frozen pie crusts and it was just fine (I carefully removed one from the pan when it was thawed and used it as the top crust). 1 3/4 c of chicken broth is a standard 14.5 oz can. Great recipe!

Classic Bran Muffins

Yummy! And nutritious at the same time. I substituted whole wheat flour for the white flour to make it more wholesome. Next time maybe I'll add some chopped apples and maybe more raisins. My kids loved this. Great way to sneak in some fiber!

Passion Bars

These were very yummy, and easy! I used old-fashioned oats and 1 1/2 c chocolate chips. As I spread the peanut butter mixture on the crust, the crust started to come up and mix with the peanut butter - actually pulling the crust off of the bottom of that pan. That was a bit frustrating, but it all looked fine in the end. I used buttered hands to coax the peanut butter layer into spreading out nicely. I would make this again!

Easy Mexican Casserole

My Family LOVED this. This will be a frequently prepared family dinner. Even my picky kids gobbled it up. I used whole grain tortilla chips. Even re-heated it was excellent! No changes necessary. Very easy, too!

Oatmeal Raisin Cookies I

Double this recipe, because they go FAST! I made the dough ahead of time, then 10 minutes before the kids came home from school started baking them. Next time I might use 3-4 cups of oats, and perhaps some chocolate chips with the raisins. Thanks for this recipe!

Oatmeal Peanut Butter Cookies

I have made a lot of cookies, and this may be the best recipe I have ever used! I followed the suggestions of other reviewers and used real butter in place of the margarine and shortening. I used a scant 1/2 t of salt. I also added vanilla and doubled the amount of oats (old fashioned worked well). You could probably easily use 3c of oats in this recipe. I also used 1 c chocolate chips. Next time I might not add as much sugar. I got rave reviews from all who tried them! Thanks for this recipe!

Chicken Noodle Soup

This is like the soup my grandma used to make! I used a whole chicken, which was easy to remove from the pan when it was done cooking. I do not suggest using canned chicken broth in this recipe because the chicken really makes its own natural homemade broth after cooking in the soup. I used more marjoram and thyme and followed the suggestions of others to use minced garlic, a little cumin, and increase the carrots to 2 c. Frozen peas were a nice addition. Next time when I have a bit more time I'd like to use the "Basic Pasta" recipe by Pat to make homemade noodles - that was a great suggestion by another reviewer! Thanks for this recipe, and thanks to others for the great reviews/ suggestions.

Neat Sloppy Joes

Great recipe! The only change I would make next time is to add only 1T of brown sugar. 1/4 c of brown sugar seemed to make this too sweet. A few dashes of hot pepper sauce would give it a little bit more flavor, too!

Tangy Slow Cooker Pork Roast

My family loved this! I usually have a few suggestions to make, but I can't think of a anything that needs changing in this recipe. Maybe if I didn't have small kids I would add a lot more hot pepper sauce! :) I will make this again.

Bake Sale Lemon Bars

These are excellent! I have made these twice, and overbaked them twice. I would bake the dough for only 10-15 minutes, bake the lemon bars for 15-20 minutes, and use a glass pan rather than a dark non-stick metal pan. Watch these carefully, because by the time they get light golden brown they are hard around the edges and slightly burned. I would cut the decorative confectioner's sugar down to 1T because they get really messy with 1/3 c. I will keep making this - just baked for less time!

The Best Lemon Bars

These are wonderful as is! The second time I made it I followed the reviewers' advice and halved the crust ingredients for a thinner crust. The second time I also put it in an 8 X 11 glass pan and used 2/3 c lemon juice and 1/3 c flour as others had suggested (I used bottled lemon juice both times). Even though the original recipe is excellent, it is 6 stars with the changes! Do spray your pan with cooking spray, and a little bit of powdered sugar on top is very pretty. I keep these in the fridge right away because of the eggs.

To Die For Blueberry Muffins

I'm not sure how to rate this because I made it with many changes recommended by reviewers. With the recommended changes it is definately 5 stars! I doubled the recipe and it made 18 muffins. Next time I will only fill the tins half-full. As they baked, they rose and a lot of crumb topping fell down and burned itself to the bottom of my oven. I would halve the topping (it gets very messy!). I used buttermilk and added vanilla for the muffins and used brown sugar instead of white for the topping. Do not over-mix or over-bake. Next time I'm going to try coarse sugar instead of the topping. Everyone loved these muffins!

Red Velvet Cake IV

Wonderful cake "as-is". I did not add any food coloring. We are generally trying to avoid artificial ingredients - why intentionally add this to a perfectly good home-made cake? Thanks for this recipe!

Chicken Salad

This salad is wonderful! I fried 6 pieces of bacon and threw out any fatty pieces as I was crumbling them. Next time I'll try smoked bacon. I used red grapes (sweeter and more colorful). I was afraid to use ginger, but it really made it perfect. Thanks Cathy!
