Chicken Noodle Soup

This is like the soup my grandma used to make! I used a whole chicken, which was easy to remove from the pan when it was done cooking. I do not suggest using canned chicken broth in this recipe because the chicken really makes its own natural homemade broth after cooking in the soup. I used more marjoram and thyme and followed the suggestions of others to use minced garlic, a little cumin, and increase the carrots to 2 c. Frozen peas were a nice addition. Next time when I have a bit more time I'd like to use the "Basic Pasta" recipe by Pat to make homemade noodles - that was a great suggestion by another reviewer! Thanks for this recipe, and thanks to others for the great reviews/ suggestions.

Oatmeal Peanut Butter Cookies

I have made a lot of cookies, and this may be the best recipe I have ever used! I followed the suggestions of other reviewers and used real butter in place of the margarine and shortening. I used a scant 1/2 t of salt. I also added vanilla and doubled the amount of oats (old fashioned worked well). You could probably easily use 3c of oats in this recipe. I also used 1 c chocolate chips. Next time I might not add as much sugar. I got rave reviews from all who tried them! Thanks for this recipe!

Oatmeal Raisin Cookies I

Double this recipe, because they go FAST! I made the dough ahead of time, then 10 minutes before the kids came home from school started baking them. Next time I might use 3-4 cups of oats, and perhaps some chocolate chips with the raisins. Thanks for this recipe!

Easy Mexican Casserole

My Family LOVED this. This will be a frequently prepared family dinner. Even my picky kids gobbled it up. I used whole grain tortilla chips. Even re-heated it was excellent! No changes necessary. Very easy, too!

Passion Bars

These were very yummy, and easy! I used old-fashioned oats and 1 1/2 c chocolate chips. As I spread the peanut butter mixture on the crust, the crust started to come up and mix with the peanut butter - actually pulling the crust off of the bottom of that pan. That was a bit frustrating, but it all looked fine in the end. I used buttered hands to coax the peanut butter layer into spreading out nicely. I would make this again!

Classic Bran Muffins

Yummy! And nutritious at the same time. I substituted whole wheat flour for the white flour to make it more wholesome. Next time maybe I'll add some chopped apples and maybe more raisins. My kids loved this. Great way to sneak in some fiber!

Chicken Pot Pie IX

My very picky family loved this! I would maybe consider adding a bit more salt, but salting at the table is just fine. I would also mix it all together gently before pouring it into the pie shell. Put a baking sheet under the pie while it bakes. I used two frozen pie crusts and it was just fine (I carefully removed one from the pan when it was thawed and used it as the top crust). 1 3/4 c of chicken broth is a standard 14.5 oz can. Great recipe!

Chocolate Covered Strawberries

What a great, easy, fun recipe! I used a pkg of milk chocolate chips and almost 1 T of shortening. I melted the shortening in the microwave for about 30 seconds to melt it, then added the chocolate chips. I cooked it on 70% power for 1 minute then stirred it and it was perfect. I loved the toothpick on styrofoam idea! I used the leftover chocolate to dip animal crackers for the kids. Thanks for this recipe!

Broiled Tilapia Parmesan

This is AMAZING, as is - no changes. Very easy, and VERY quick. 6 minutes total cooking time - who can beat that??? I love how tilapia is not very fishy, and in this recipe, it is full of flavor and very tender. I will make this again in a heartbeat! And very low carb is a plus (0.6g per serving!

This was exceptional! I used mini semi-sweet chocolate chips instead of raisins. Next time I would shape the dough into TWO 3/4 inch thick rounds so the wedges would be shorter/smaller. Thanks for this recipe!

Sour Cream Coffee Cake III

I followed the reviews and used half the butter, and a scant 1/2 c brown sugar and 1/2 c white sugar instead of the 2 c whjite sugar. I also like what someone had suggested to use Hershey's cinnamon chips sprinkled over the bottom layer, and the second time I made it I sprinkled cinnamon chips AND blueberries (1 pint) - very good!

Lemon Bars

Excellent recipe! I used 1/2 cup melted butter for the crust instead of 1/3, and 1/2 c sugar instead of 1 c sugar for the topping and it was still very sweet. I also recommend either halving the crust or doubling the filling, and adding twice the lemon juice and lemon extract. WATCH THIS CAREFULLY while it bakes - very easy to overbake. Use minimal oven times.

Party Punch VI

I made this for my daughter's Valentine's Day party yesterday and it was a HIT! Very good, easy, and fun. We put heart shaped ice cubes in each cup. The proportions of the three ingredients don't have to be exact. It would be good even without the fruit punch!

Unbaked Chocolate Oatmeal Cookies

Great cookies! Based on others' advice, I also used less sugar (1/2 c white + 1/2 c brown). I would probably add 1/4 cup of each next time! They are still very sweet. I followed the reviewers advice and added 1T of vanilla, and I ended up using 6 cups of oats. I don't think they would have held any kind of a shape with less oats. I used 1 cup of mini semi-sweet chips and that was great. They sort of melted into the cookies a bit, but it added to the flavor! I also used very finely chopped walnuts which were indetectable to my kids. :) Great "one-pot" no-bake cookie!
