Mini Pumpkin Butterscotch Muffins

Delicious! Very easy to make with few changes (used more morsels and no white sugar - used 3/4 packed brown sugar). Was a hit with the whole family. Will definitely be making this again and again!

Cinnamon Pork Tenderloin

Great recipe - It doesn't look like much when all the ingredients are added together, but the amounts were just right to marinate the meat - nothing wasted. I used the chicken broth and since I didn't have any garlic cloves on hand, I used chopped onions. I ended up having to bake it (45-50 min./350 degrees) instead of grilling and it turned out delicious! I can only imagine how great it would be grilled.

Double Layer Pumpkin Cheesecake

This was excellent! I followed the recipe with just a few changes. I used pumpkin spice instead of nutmeg and spread 1 1/2 cups of the cream cheese mixture as my bottom layer as other reviewers have done. (We like the thicker cream cheese layer.) I plan to make this again, but will add a little more sugar to the cream cheese mix or add some instant vanilla pudding to sweeten it up a bit more. Otherwise, fantastic!

Parmesan and Basil Chicken Salad

This was a good base recipe, but I had to tweek it some to make it really tasty. I did what others suggested and added some dill and yogurt and more parmesan. The measurements aren't accurate as a lot of it is done by personal taste.

Easy Apple Coffee Cake

I made this recipe twice in one day. I tried some of the modifications suggested on the first one: using applesauce in place of eggs/oil, using 3 apples, coating the apples with the mixture and stirring them into the batter - it didn't turn out well at all. I was very disappointed. On the second attempt, I made it closer to the recipe, with just a few minor changes: I used only 2 large apples and spread it in a big rectangular baking dish. I layered the apple mix which worked a lot better than stirring it into the batter, but I did still coat the apples with the cinnamon sugar mix. I still had to bake it for almost 90 min. and it turned out perfect, moist and very delicious. I did add a glaze topping once it cooled, which made it even better. I brought it to an outing and everyone loved it. I'm glad I gave it a second chance. It's definitely worth making again.

Country Breakfast Casserole

Great recipe. I added the shredded hashbrowns on top and layered the bottom with the bread slices - it turned out delicious. There are so many variations you can do with this. The timing and ingredient proportions are just right!

Pumpkin Chocolate Chip Muffins

WOW! This was delicious and a favorite with the whole family. I did use whole wheat flour and made mini muffins using mini chocolate chip morsels. It turned out so moist and adding the cream cheese frosting is a must.
