Vegan Red Lentil Soup

Reviewed: Mar. 24, 2009
This was amazing! I wanted to use the lentils I had in the cabinet, so I typed that up and landed on this recipe! I was amazed at how different this was for me to cook. I did not have coconut milk but had sweet condensed milk, no fenugreek seeds but I had sesame seed oil, and I used tarragon and parsley because I had no cilantro. I like to substitute where I can and with this on it made no difference. I used another reviewers addition with coconut oil, and in the first step when i was browning the onion, garlic, ginger, I added cocnut flakes and some green pepper. Again this was amazing and I will make it again for sure, my picky girlfriend liked it as well! I served it over rice, with a little cheddar on top, sliced avocado, and Naan Bread. Perfect meal!

Pineapple Upside-Down Cake V

Reviewed: Feb. 19, 2009
This was awesome!! I got the butter cake mix instead of yellow but that was the only thing I did different. I even made an "ooopsie" and for got to drain the juice from the crushed pineapple, and then I had to drain it from the pan!! lol but it still came out amazing, I will be making this again! Oh, and you really should use the coconut, I know it sounds strange but it makes this cake have such a great flavor!!

Slow Cooker Beef Stew I

Reviewed: Jan. 20, 2009
This was a great starter recipe for me. I needed something to set me on the way to making great beef stew and this was it. I added some red wine, thyme, whole garlic cloves, and some turmeric for color. I also did what someone else said and added some flour to make it a little thicker. It came out amazing and I served it in a sourdough bread bowl, with muenster cheese slices on the side to make it look perfect!! thank you for the starter recipe i will make this again and again.

Roasted Brussels Sprouts

Reviewed: Jan. 19, 2009
This was my first attempt at brussel sprouts. I cut them in half and added pinenuts and a little garlic. They were pretty good but I wish they had a little more flavor. Next time I will put some thyme or rosemary in them...maybe even both!

Easy Ham and Noodles

Reviewed: Jan. 6, 2009
I liked this recipe a lot. Though I doctored it up quite a bit. I sauteed onions, green pepper, and garlic and added it to the mix. Also added a small can of sliced mushrooms (drained of course) and sprinkled cheese and french fried onions over the top. It was awesome!!
