Quick Chicken with Asparagus and Provolone

Found this through ingredient search for chicken and asparagus. Used fresh asparagus, added 1/4 C of sliced baby portobello mushrooms with the chicken which I rolled in Panko breadcrumbs, and garnished at the end with chopped green onion. 15 minutes simmer left both the asparagus and the chicken perfect. It was quick and easy, and--best of all-everybody loved it!

Chicken Cordon Bleu II

Breaded with Panko breadcrumbs instead of flour, used olive oil instead of butter, and fat-free plain yogurt instead of cream (thickened with corn starch). It was delicious, and my family has already requested it again. I also rolled the chicken TIGHTLY (like prosciutto in an antipasto) instead of folding. Quick, easy, and delicious!

Shrimp Fra Diavolo

If you enjoy food with a bite, be generous with the red pepper flakes. Also, you can use plain diced tomatoes and season with your own basil and oregano. A quick, easy, and tasty dish; as good as my North End grandmother's recipe, but much simpler!

Wild Rice and Squash Pilaf

Used a unique wild-rice blend I found in my market, increased the vegetables, especially crimini mushrooms. Other than that, I followed the recipe as shown...and LOVED it! What a great side for just about any meat, or could even be the main attraction!

Delicious, light, and healthy. Added ground red pepper to the glaze to balance the sweet of the maple. I will definitely make this one again. And again.....
