Cracker Barrel's Green Beans

  • 1/4 pound sliced bacon
  • 3 cans (14 and 1/2 oz.) whole green beans--do not drain liquid
  • 1/4 of a medium sized onion, chopped
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground pepper

Instructions

In a two quart sauce pan on medium heat, cook bacon until lightly brown but not crisp. When bacon has browned, add green beans. Add salt, sugar, and pepper and mix well. Place onion on top of green beans; cover with a lid and bring to a light boil. Turn heat down to low and simmer beans for 45 minutes.

why cook canned green beans for 45 mins? the recommended time for fresh green beans is 10 to 15 mins, canned green beans only need to be warmed up and they are done. I can see if your trying to infuse the flavor thru the beans, but 45 mins seems Excessive.

Good question. I revisited the restaurant to figure that out. Maybe simply because of how limp and lifeless the green beans are when they are served there! I haven't used canned green beans yet; I always buy frozen and usually and soak them for a few minutes in hot water before starting. I know the 45 minutes still produces green beans not nearly as liefeless as CB's but a bit more preferential to my liking!
