Eileen's Spicy Gingerbread Men

Reviewed: Dec. 9, 2014
I like this recipe but might add more spice next time. Be sure to ONLY use the egg yolk - I threw in the whole egg and I think that might be why I needed to add so much flour to roll them out. I did chill overnight but still sticky. Anyway, it's pretty good and I will use it again next year! Thanks

Outrageous Chocolate Chip Cookies

Love these just as the recipe is written. Crispy on the outside and chewy in the middle. Just the right amount of everything - not too peanut buttery! Stay crisp in the tin for as long as they lasted!

Loved it just the way it's written. Pared it down to 10 servings. Will make again and again.

Fresh Southern Peach Cobbler

Reviewed: Aug. 9, 2014
However you describe the topping it is delicious. Hopefully, anyone looking for a cobbler or fruit crisp recipe will ignore the fact that this recipe calls for peaches. I have made it "apple/blackberry" then "peach/blueberry" and "pear/raspberry". Wonderful every time. I'd say the topping is more like a flakey pie crust. Don't forget to sprinkle the sugar on it before baking as it adds an extra crispyness. Thank you for a great recipe. So glad I found it. Oops - forgot to say I halved the topping - maybe that's why mine was more pie crust like? Loved it anyway

Yummy. Moist with chewy edges. Would be really great with icing but they were almost gone before I had a chance to ice them.

Empire Cookies

Very nice. Easy to roll out and cut. Just what I was looking for after having one from the local bakery. Will include in my Christmas cookies for sure! Thanks for a great, simple recipe. PS - also used this recipe for my Stained Glass cookies and it was perfect as it's so easy to work with the dough

Light, moist and very nice. Topped with a little drizzle of "runny" lemon glaze these were yummy.

Pumpkin Muffins II

Reviewed: Oct. 19, 2012
I loved these finely textured muffins. I divided the recipe in half (still used 2 eggs) and got 9 nice "tea size" muffins. I used canned pumpkin (1 cup) as I am always in a hurry - and they were delish. Put a dab of cream cheese icing on the few remaining muffins the next day and that was a nice addition. Almost like a light pumpkin loaf. I went a little light on the cloves for fear of overpowering the pumpkin flavour. Will make these again next week!

Really like these muffins. Nice dense "cakey" texture. Have made twice with fresh blueberries and will make with strawberry or peach next time.

Classic Bran Muffins

Reviewed: Apr. 16, 2012
I have made this recipe over and over and I don't know why I've been so long in reviewing. So delicious - I don't ever have buttermilk so use 1/2 milk and 1/2 sour cream. I always add dates because I think that's what makes a great bran muffin. So glad I found this recipe....you really won't be disappointed. Very moist.

Cinnabun Cookies

Very good but mine turned out quite big and I only cut them about 3/8 inch thick. Would not add cinnamon to dough as filling has enough. These look really nice!

Chocolate Mint Cookies I

Reviewed: Apr. 2, 2012
Pretty good...be sure to roll into balls rather than use a cookie scoop so dough is well compacted. Easy to overcook so take them out when time is up for sure. These look pretty but mint can be "too much" . Placed a whole nut on top of some instead of mint. Yum.

Halibut Supreme

Reviewed: Feb. 26, 2012
Enjoyed this just the way the recipe is written other than using pre-grated mix of cheeses. Moist, delicious sauce that puffs up and turns a nice golden brown. Looking forward to trying this over a less expensive fish - maybe cod - but the halibut was outstanding.
