Pumpkin Muffins II

I loved these finely textured muffins. I divided the recipe in half (still used 2 eggs) and got 9 nice "tea size" muffins. I used canned pumpkin (1 cup) as I am always in a hurry - and they were delish. Put a dab of cream cheese icing on the few remaining muffins the next day and that was a nice addition. Almost like a light pumpkin loaf. I went a little light on the cloves for fear of overpowering the pumpkin flavour. Will make these again next week!

Best Ever Muffins

Really like these muffins. Nice dense "cakey" texture. Have made twice with fresh blueberries and will make with strawberry or peach next time.

Classic Bran Muffins

I have made this recipe over and over and I don't know why I've been so long in reviewing. So delicious - I don't ever have buttermilk so use 1/2 milk and 1/2 sour cream. I always add dates because I think that's what makes a great bran muffin. So glad I found this recipe....you really won't be disappointed. Very moist.

Cinnabun Cookies

Very good but mine turned out quite big and I only cut them about 3/8 inch thick. Would not add cinnamon to dough as filling has enough. These look really nice!

Chocolate Mint Cookies I

Pretty good...be sure to roll into balls rather than use a cookie scoop so dough is well compacted. Easy to overcook so take them out when time is up for sure. These look pretty but mint can be "too much" . Placed a whole nut on top of some instead of mint. Yum.

Halibut Supreme

Enjoyed this just the way the recipe is written other than using pre-grated mix of cheeses. Moist, delicious sauce that puffs up and turns a nice golden brown. Looking forward to trying this over a less expensive fish - maybe cod - but the halibut was outstanding.

Frosted Banana Bars

Really good - a very reliable recipe for a delicious cake. Not sure why it's called a bar but who cares - it's GOOD. Made this several times. Last time I made 1-1/2 times the recipe and it was the perfect amount of batter for my 11x15" Wilton cake pan - which serves 40 guests. Frost it with real cream cheese icing because it's worth it. Keeps well in the fridge so you can make it a day ahead for sure.

Mad Hatter Salad

Made this recipe for 60 guests at a ladies luncheon yesterday. Seems it was a "hit" as a number of ladies asked for the recipe - and many more commented that the salad was delicious! Do wait for the 'last minute' to add the dressing so that the ramen noodles maintain their crunch. I used 5 bags of coleslaw mix & 4 large bunches of broccoli - had some left over even with a generous serving of about 3/4 cup each. I only used 1 package of noodles for each bag of coleslaw and went VERY light on the packaged soup mix for seasoning (which has a very strong, salty chicken flavour). I cut back on the onions as the ladies were playing bridge afterward (ha ha). Also, just drizzled butter on the almonds, sunflower seed, noodle mixture and roasted it in the oven. Thanks for a great salad idea!
