I thought crepes would be much harder than this! Will definitely make again, but reduce the amount of butter in the batter - they came out slightly greasy.

Pretty good - the beans did not need 90 minutes to soften, in fact, most of the black-eyed peas were mush by the time the dish was finished. I would also recommend reducing the quantity of rice to ~1 cup.

Fish Tacos

We loved this recipe - used tilapia & tempura batter (replaced the ice water with lager beer). Might be nice to add a little sweetener (honey or corn syrup) to the sauce, but great overall!

Pork and Green Chile Casserole

I had some peeled roasted green chile left over & didnt want it to go bad, so i gave this recipe a shot. Since i didnt have instant brown rice, i cooked some of the normal kind in a pressure cooker for 18 mins and added it to the casserole (nixing the additional water). The result was a very nice burrito stuffer.

Rasta Pasta

Spicy, flavorful pasta! I used the blackening spices as a dry-rub for grilling the chicken breasts on a George Foreman grill. I let the meat rest for ~10 mins while sautee'ing the vegetables, then i cut the chicken breast into bite-size pieces and added them to the vegetables. I had sun dried tomato pasta sauce on hand, and it seemed to go very well. This is a dish that is even better as leftovers.

Steak Pie

Going northern european style is great for the fall! I added 2 chopped parsnips, a chopped turnip, ~1 cup chopped carrots, and a roasted bulb of garlic with the onions, and 1/4 cup grenache/syrah once the vege's were tender. Spiced (to taste) with Bay leaf, herbs de provence, paprika, celery salt, tumeric, fresh ground mixed peppercorns & increased the worchestershire to 2 tsp. Next time i'll include a couple fingerling potatoes.

Butternut Squash and Turkey Chili

I was very hesitant to add squash to chili, but i went for it (Acorn instead of Butternut). I forked the outside of the squash and baked for 15 mins at 400F before peeling and adding to pot. I replace the diced tomatoes & tomatoe sauce with 2 (10oz) cans of Spicy Rotel and a small can of tomato paste and 1 cup of broth. The recipe started out pretty bland, but was improved with additionalchili powder (total: 2 tblsp Chimayo Red + 2 tsp Pasilla)

Very nice - i will definitely make again, but will reduce the quantity of mayo by 1/3. Niether the black beans nor the jalapeno came out as very distinctive in the dish, still definitely 4*.

Rosemary Ranch Chicken Kabobs

Great marinade for Kabobs! - i added peppers (bell, jalepeno, yellow wax), tomato, and onion to the skewers, and doused everything in the extra sauce before grilling & made flatbread wraps with taziki, cilantro, and green onion. Thanks, will definitely make again!
