No-Cream Pasta Primavera

Oatmeal Waffles

Needed to add ~1/4 cup of milk to make the mixture the right consistency for waffles. I have made this as pancakes also, which are great too, but we prefer the waffles. We like to supplement the recipe with blueberries and pecans or walnuts, also. Replacing the whole wheat with spelt makes a nice nuttier version. I am also planning to try this with Buckwheat, as a gluten-free option.

Gourmet Mushroom Risotto

Crispy Oven-Roasted Rosemary Chicken with Sausage and Potatoes

I made this because my wife loves rosemary roasted potatoes, but i was pretty skeptical. The flavor is good, but it's somewhere between a side dish, main dish, and casserole. The only change i included was the addition of 6 cloves of raw garlic before placing in the oven. This was a big plus - next time i'll add 8-10 cloves.

Used cheap canned enchilada sauce and a blend of mild and sharp white cheddar, and it was great! Next time, however, i will reduce the quantities of soup & sour cream by ~1/3.

The Best Meatballs

Definitely the best meat balls i've ever cooked - i gave it 4 stars because even though frying is probably the tastiest method for prep'ing these, it is pretty time consuming and adds a lot of fat. Next time i will broil them on each side, and then combine with the sauce.

Turkey and Quinoa Meatloaf

This recipe is a real find! Very flavorful and low fat. It seems that you could almost double the quinoa and not sacrifice flavor. I served the dish with sweet corn and green beans -- will definitely make again!

Irish Lamb Stew

Great base recipe - Here are my modifications: i rubbed the diced lamb with a mixture of salt & pepper, dried parsley and Herbs de Provence, then dredged in flour. After browning the lamb in the bacon drippings and sauteeing the onion & garlic mixture, i deglazed the pan briefly with 1/3 cup Cabernet and combined the all of the ingredients in a crock pot. I also replaced half of the water in the beef stock with Guiness, and added 1 diced turnip and 2 diced parsinps. I simmered the stew in a crock pot for ~6 hrs on low. Will make again!

Dijon-Tarragon Cream Chicken

I couldnt give 5 stars, because too much was modified. As suggested by others, I rubbed the chicken with Herbs de Provence, salt and pepper, and coated with ~3 tblsp honey mustard. After a couple hours of marinading, i applied a lite coat of flour and browned on medium high heat, followed by ~15 mins covered at medium-low heat. I then deglazed the pan with a slightly sweet white wine, added 1 tsp crushed garlic, and 1.5 cups of mushrooms. After ~5 mins sautee, i added the tarragon and heavy cream. Will definitely make again!

This is my new recipe for waffles! Forget bisquick, et al. The texture turned out perfect - i added ~1/2 cup of walnuts to batter before cooking on waffle iron, will try blueberries next.

I thought crepes would be much harder than this! Will definitely make again, but reduce the amount of butter in the batter - they came out slightly greasy.
