Corn and Crab Bisque

Man, I really didn't go for this. It tasted to like crab-water with milk, honestly. But after I tasted it and found it lacking I added 1/2 a lemon, squeezed, several dashes of hot sauce, and about 6 slices of smoked provolone. THEN it was a good soup.

No Bake Peanut Butter Pie

Loved this!! We made sure the cream cheese was softened at room temperature before we made the filling - the filling turned out smooth and velvety. And we didn't add anything special to the top - I offered whipped cream and chocolate sauce, but no one wanted it. It's perfect the way it is! (Oh, but I did use an Oreo crust instead of graham cracker.)

Pudding Poke Cake

I was short on ingredients, and this cake was perfect! I used white cake mix. I also used cook and serve chocolate pudding for the filling, then chilled for about an hour, then used instant chocolate pudding for the "frosting." YUM!!

Caramel Popcorn Balls

These were a hit! Making them was a fun family activity. We made all the popcorn, but only ended up using about 2/3 of it, because we wanted more caramel. We made our balls a little smaller and ended up with 50! Will keep hold of the recipe for next time.

Alfredo Sauce

I liked the flavor, but would like to find a smoother sauce. Mine was a little watery. Also, be sure to break that yolk and stir it quickly!

Artichoke Spinach Lasagna

Yummy! I made this based on a slightly different recipe...used alfredo sauce instead of tomato, and didn't pre-cook the noodles. I just added a 1/4 cup of water to each end of the pan before baking. Great recipe! Just like artichoke spinach dip made into lasagna!

Chocolate Eclair Dessert

Very good! I made it the day before, as others suggested. Very rich! Next time I won't use the whole 16 oz. of frosting, and I might use the vanilla rather than white chocolate pudding. Here's a tip: I frosted the last layer of crackers before I put them on the pudding. Then I just had to fill in the cracks!

My new favorite enchilada recipe! Next time I'll cut the chicken into bigger chunks instead of strips so they don't take so long to separate out. The enchiladas were well worth the work! Thank you!

Artichoke Dip II

This recipe is great! Sometimes when I'm in a rush, I just heat it in the microwave until it's bubbling. It's the perfect dish to have sitting out if you're expecting company for dinner, but dinner is late. Only, the last time I served it as an appetizer, everyone preferred it over dinner!
