Gingerbread Men
Excellent recipe! I like the faint gingerbread taste evened out by the pudding mix. I used tapioca pudding because I did not have butterscotch. I was afraid it might come out grainy, but I think it actually created pockets of flavor and softness within the cookies. I would add more ginger and cinnamon for the future but that can be remedied by adding cinnamon to the icing. Overall, a great recipe...molasses can be so messy, and this is a great substitute. So easy!
