Lime Chicken Soft Tacos

Reviewed: Feb. 24, 2014
Loved this recipe. Substituted cilantro for oregano. Tripled the sauce, added tequila, and marinated the chicken in half over night and then discarded marinade. Cooked chicken through and then added rest of sauce, cooking for 10 minutes longer. Squirted extra lime on the finished taco to give it a strong citrus flavor. Omitted the salsa and added sour cream. Absolutely delicious!

Chicken Noodle Soup

Reviewed: Jan. 29, 2011
Absolutely delicious. I made the follow changes: I used the Boiled Chicken recipe here to prepare chicken (added two chicken bullion cubes to the recipe). Then used 5 cups of the stock in the soup. Also used 4 14.5 oz. cans of Swanson chicken broth (low sodium). Then, eliminated the water and bullion cubes from this chicken soup recipe. Doubled the butter, pepper, and onion, and added some garlic. Used one cup of carrots, but next time I will used two cups. This recipe really screams for more carrots. I also added one cup of sweet yellow corn. It all turned out fantastically. This soup is so smooth and delicious. Everyone loved it and had seconds.

Slow Cooker Chicken and Dumplings

Reviewed: Jan. 23, 2011
This is a fantastic recipe. I used chicken broth instead of water and made 1.5 times the liquid. I've made the recipe with dumplings and everyone loved it. However, I found a better use for this recipe. I now skip the dumplings and make waffles to go with it. This is the best chicken and waffles recipe ever. Pull the chicken apart about one hour before you are ready to eat and put it back in the crockpot to cook for that last hour. Each person then puts the chicken mixture on top of his waffles. Serve with corn and cranberry sauce on the side. This might be my favorite meal ever. It tastes so much better than traditional PA Dutch chicken and waffles.

Coconut Cream Pie

Reviewed: Jan. 23, 2011
I used one can of coconut milk for half of the milk requirement. Overall, this recipe is too sweet. Next time I will reduce the amount of sugar to maybe 3/4 cup.

Slow-Cooker Chicken Tortilla Soup

Reviewed: Jan. 15, 2011
My wife absolutely loves this recipe, and so do I. It is relatively easy to make and has a unique and delicious Mexican taste. The kids really like this one too. Make sure you garnish with avocado, cheese, and chips. Oh and don't forget that sour cream! I will be making this over and over.

Awesome Slow Cooker Pot Roast

Reviewed: Jan. 15, 2011
This was good, but not great. Unfortunately, the kids did not like it all, so I won't be making it again.

Mexican Casserole

Reviewed: Jan. 15, 2011
This was a simple and delicious recipe. Everyone loved it, including the kids. It wasn't as good the second day though. In the future, I will make only enough for one meal.

Chicken Potpie

Reviewed: Jan. 15, 2011
This is the best chicken pot pie I've ever had! I made double - froze one pie and cooked the other. The whole family went nuts about this, including the kids. The filling is so tasty! I will make this recipe over and over.

Slow Cooker Italian Beef for Sandwiches

Reviewed: Jan. 15, 2011
Oh my gosh! This is delicious and simple to make. I followed MomSavedbyGrace's changes and the recipe came out perfectly. These sandwiches are definitely better a little soggy on the bottom. Next time I will put a little dipping juice (from the beef) out for each person.
