Jamie's Cranberry Spinach Salad

Reviewed: Jan. 9, 2012
We really enjoyed this recipe. A friend gave us a huge container of spinach as well as a handful of clementines. Using what I had in the house: used 3 cuties, and added feta, chix and One Ton chips to my salad. We didn't have cranberries or almonds. We all loved it! Thank you!

I used 1 1/2 pumpkin, as I didn't have any sour cream - came out fabulous. I will add a little more spice next time around. Family loved it!

Baked Potato Soup

Reviewed: Sep. 12, 2011
I liked this recipe. It reminds me of potato soup that my Mom made when I was young. I added some mushrooms and Marsala wine to deglaze the pan. I also added a couple of Italian sausages to make more of a menu out of the soup.

Classic Waffles

Reviewed: Aug. 19, 2011
I liked this recipe. I took another's advice and made them in my blender - easy. I used white whole wheat flour - good. I used 1/2 butter. I added a little extra milk for ease of blending - it made them a little too thin - and they stuck to the waffle iron - i used Pam for each waffle.

Hungarian Mushroom Soup

Reviewed: Feb. 24, 2011
We enjoyed this soup. I made a few additions - but nothing that would alter the taste of the original recipe too much. I added 4 small potatoes and some precooked chicken. I did add a healthy splash of Marsala wine (this must have changed the taste just a little :) I did puree a 1/4 of the soup and add it back in. SO creamy and delicious!! Thank you!!! I will so make this again!

Whole Wheat, Oatmeal, and Banana Pancakes

Reviewed: Jan. 13, 2011
I made this recipe today with a few modifications: added added 1/4 cup ground flax, about 1 TB applesauce, some cinnamon, nutmeg as well as 2 scoops protein powder and a big handful of frozen blueberries. I blended all the liquid ingredients in the blender and then mixed them into the dry. Came out great - my family loved them. Thank you!!

Creamy Chicken and Wild Rice Soup

Reviewed: Dec. 27, 2010
I added celery, mushrooms, onions, garlic and carrots to this soup. I used 1 cup heavy cream and 1 cup 1% milk. I used the left over turkey from Christmas dinner - the soup came out very good. The reason I didn't give it 5 stars is: I don't think the 1 box of rice was enough - I could hardly tell that it had rice and the second reason - I felt that the flavor was a little bland - even though our turkey was super flavorful. I will make this recipe again - adding a little more seasonings and a second box of rice.

Melt - In - Your - Mouth Shortbread

Reviewed: Dec. 27, 2010
I whipped these quite a long time per other reviews. I added a little almond extract for flavor. I did put the dough in a pasty bag with a large star tip - they look great...they taste pretty good. I don't think that I would like them without the almond extract. I might try to make these again and tweak the recipe to add more flavor.

Fluffy Pancakes

Loved this recipe. My 11 month old baby can't eat eggs, but wants to eat what her big sister is having, so I used an egg substitute and I used white whole wheat flour. They came out too thick, so I added a little extra milk. Great results! Baby loves them. Thank you!

Donut Muffins

Reviewed: Oct. 10, 2010
Aloha, I followed the recipe exactly. I thought it came out great. The only change that I made was to dip and sugar only the top of the "muffin" instead of the whole thing. I used a small cookie scoop - which made exactly 24. I had extra dipping butter and sugar left over. I should have paid attention to the other reviews and made a double batch. Even my picky husband liked them. I will make these as a Sunday Morning treat for the family. Thank you for the great recipe!!

These biscuits came out better than any other that I have made. My family doesn't like dense biscuits and these were a hit. I may try to alter the recipe for scones for them. I made them in the food processor and refrigerated over night. Thank you

Mexican Lasagna

Reviewed: Oct. 18, 2009
I had left over taco meat that needed to be used and followed some other reviews by adding refried beans on two layers and tortillas, salsa and cheese for the third and final layer. I really liked it. It took just a few minutes to put together and into the oven it went. It can't get much easier than that. Thank you.
