Buffy's Refried Beans

After making these, my husband will never allow me to use canned refried beans again! These are very good and very easy. I did not use lard, because I didn't have it at the time. I used bacon fat mixed with a little vegetable oil, and they were awesome!

Royal Icing II

This icing was perfect! I baked sugar cookies for Christmas and used this icing to decorate. We drove 250 miles on Christmas day with these cookies jumping around in the trunk, and the icing stayed on.

Blue Ribbon Horseradish Pickles

Big Soft Ginger Cookies

The VERY BEST COOKIES EVER! They are gorgeous when they come out of the oven and taste better than any cookie I have ever made. The only thing I did differently was use 1 t. cinnamon instead of the 3/4 it calls for and I flattened them slightly after rolling them in the sugar. This will be my go to recipe from now on.

Colleen's Slow Cooker Jambalaya

My family loved this! I accidently got boudain sausage, and I didn't use chicken either. I also omitted the thyme because I don't care much for it. I will definitely make this again, and I will try it with the right sausage and chicken!

My husband loved this! I am not normally a pork fan, and I am always looking for a way to dress it up. The only change I made was I used fresh mushrooms and those thin, breakfast sliced pork chops, because that is what I had on hand. I will definitely make this again!

Microwave Cake

My oven isn't working and I have been looking for a dessert I could make in the microwave. This is it! I used a cherry pie filling/chocolate cake combo like someone else suggested and it was awesome! I didn't have enough applesauce so I used veggie oil and I frosted it with a canned chocolate frosting. I will make it again!

Tex-Mex Beef and Cheese Enchiladas

So good! My husband and I ate every bite of this over 2 days. He's already asking when I will make it again. I did add green onions inside the rolled tortillas and on the cheese on top, but other than that I didn't change anything. Next time I think I will add some more salt.

Stuffed Cabbage Rolls

These were pretty darn good, but I did do a little tweaking. I usually try not to do that when I try other people's recipes, but I just couldn't do without garlic. So, I added a clove of garlic. I also mixed my remaining tomato soup with about a 1/4 c. of beef broth before I poured it over the rolls. I added a little cornstarch to the sauce in the end, because it was a little too thin (which was my fault for adding the beef broth). Had I not done all of these things, I am positive it would've been just as good!

Jalapeno Pepper Jelly
