Saltine Toffee Cookies

So let me start off by saying this is not an accurate review, as I have made changes and did not follow the original recipe. Here's what I did. Instead of the 4 oz saltines, I used 9 oz potato chips and smooshed them down so they were relatively flat on the bottom of the pan, but not to the point that they were crumbs. Because I used more than double the amount of saltines/chips that it called for, I made more of the toffee...I only made 1 1/2 times more instead of doubling it like I should have, but honestly I think I should have just left it at the original amount of toffee with the extra chips...I mean, it was GREAT, but for my taste the toffee just overpowered a lil too much and made it too rich. A bit more potato chip flavor and less toffee would have made it EXCELLENT! All that being said, you MUST try it with potato chips instead of saltines! I have had the saltine version before, and don't get me wrong, it's awesome, but the chips are just an unexpected twist that people just never expected...and you still get the sweet/salty combo and a nice crunch...needless to say it was fun seeing people try to figure out what was in them, and was begged for the recipe by the end of the night.

The Best Unbaked Cherry Cheesecake Ever

very light cheesecake taste...creamy consistency, sets well in freezer for ~1 hour. used sugar to taste, and added lemon zest and lemon juice to filling mix to make a lemon cheesecake w/ a raspberry puree topping.

Carrot Cake III

the carrot cake was wonderful...HOWEVER, using my better judgement, i only used 1/2 the sugar called for in the frosting and thought it was still was way too sweet (and i have a big time sweet tooth!) i added more cream cheese to equal out the sweetness until i ran out of cream cheese and had to settle for what i had, which i still thought was too sweet. I shared the finished product with our softball team for my bf's birthday and people were actually throwing away 1/2 eaten pieces stating it was too sweet! my recommendation? only add a little sugar at a time to get it to how YOU like it. you can always add more, but you cant take it out!

French Tartiflette

was VERY yummy! a quick warning...if you can find the reblochon like it calls for, it smells pretty nasty (a combo of sweaty feet and B.O) BUT the final product DOES NOT taste like you are eating feet! I loved it!

Beet and Cheddar Risotto

only added 1/2 the cheese. was kinda of bland for me, not enough beet flavor. I did, however use white wine instead of water, and i think that helped!

Banana Crumb Muffins

I just finished baking these muffins,and contrary to another reviewers suggestion, the ones with chocolate chips taste awesome! i did chop them up 1st so they were smaller pieces so maybe that made a difference. i also added peanut butter chips (whole, not chopped) to some as well (which also tasted awesome!), and all of them had chopped pecans. the only problem i've had so far actually didnt come from the recipe itself but from some of the reviews. i did what some reviews said and waited till the last 5 minutes of baking to add the crumb topping and i actually thought it wouldve been easier to add it at the beginning of baking. since the muffins rose above the level of the pan (like they should) it was actually more difficult to add the topping because it would not stick except for right on the very top...i couldnt get it to stick over the entire top, but in the process of trying i made quite the mess everywhere. my suggestion is to stick to the original recipe as for when to add the topping. i did however follow the reviews and added more cinnamon, some nutmeg, and i crushed up some pecans for the topping. *update* i only got 9 normal sized muffins out of the batter (smaller than dunkin' donuts sized muffins if that helps)i cooked 6 the first time since i only have 1 muffin pan, and 3 the second. i added the crumb topping before baking for the last 3...the crumb topping came out fine and was more uniform over the entire top of the muffin. overall these were awesome

Spinach and Blue Cheese Soup

This was an absolutely AWESOME soup! I love finding recipes that are not your normal "safe" recipes to try. When I told people I was going to make this soup, they cringed at the name...especially my boyfriend (who went back for seconds!)but I am so glad I'm willing to try new, interesting things!! I only made a few changes...I halved the recipe, which then called for 4 oz of blue cheese, but I still added the 8 oz it called for in the original recipe. (I bought a generic brand of blue cheese and it was VERY mild...after adding the 4 oz, I couldn't taste ANY blue cheese taste). I also added some cooked chicken, and some white cooking wine with lemon flavoring (about 1/2 cup). I will DEFINITELY make this again, but will not half it next time so I can freeze some!
