Acorn Squash with Apple

First time trying acorn squash. Made this as a side dish for Thanksgiving dinner. Used three apples instead of two and increased cinnamon as we like cinnamon. While it is pretty good, I think it is best in small doses as it is kinda sweet. I just don't think I like a dessert-type vegetable along side my roast beef, mashed potatoes and gravy, and peas and carrots. Even though it wasn't bad, I highly doubt that I will make it again. Family didn't mind it either but felt the same as I.

High Temperature Eye-of-Round Roast

Decided to make this for Thanksgiving dinner as my son had requested roast beef and gravy. I should have listened to my instinct but got swayed by all the positive reviews. First of all, I did not use eye-of-round but rather a sirloin tip roast. I brushed it with olive oil and made a rub with onion powder, onion salt, garlic powder and black pepper. As I was worried about having rare meat which I do not like, I cooked it 9 min/lb and turned down the heat to 200 degrees F for 1/2 hour and then left it in the oven for the remaining 2 hours. It was quite raw and the few end pieces we could eat were too chewy for us. It went back in the oven for an hour at 350 degrees F for an hour (meant to leave in in only 1/2 hour but forgot about it and cooked it longer). It was quite well done but not chewy and actually quite tasty. I may try a variation on the high temperature method by cooking much longer by pound and reducing oven off time.

Classic Waffles

Bland, flat, very dense waffle and no, I did not overmix the batter. Also used a brand new container of baking powder so I know it is not my methods. Have been baking/cooking since the age of 12 (~30 years) so I do know what I am doing. Followed recipe as written with the exception of adding 1/2 whole wheat flour and beating eggs separately and folding in egg whites. One of the worst waffle recipes I have tried off this site!! The search continues for THE waffle.
