Summer Squash Bread

I made this as jumbo muffins with another reviewer's suggestion of a crumb topping. I think it made about 8. My boyfriend said they were the best muffins he ever had!

Cafeteria Carrot Souffle

I added cinnamon and nutmeg. I chopped the carrots up small and boiled them until soft, then drained waand used a hand-held electric mixer to beat the carrots to a pulp. The dish tasted great, but I had to bake it for an hour, and it was still very squishy. I'm not sure if it was supposed to be. I may add a bit more flour to it if I make it again.

Cajun Shrimp

This was excellent! I used fresh garlic rather than powder, and I added some flour at the end to thicken it up a bit. Would go great with some linguini. I thought about upping the cayenne pepper, but I'm glad I didn't, it's quite spicy!
