Oven Fried Chicken III
Pretty good! I think next time I'd add more seasoning. I used the other peoples advice and thinned out the mayo with a little milk and cooked on a cooling rack. I also didn't have bread crumbs, so I mashed up some soda crackers and coated with that instead. Will make again...tonight actually!

Banana Oatmeal Bread
Just tried this out in order to get rid of some old bananas and this is pretty good! I used 3 bananas and followed the recipe, but used a little less sugar (around 3/4 cups)and added walnuts. This was still a bit too sweet for my taste, but it's not bad. I love the crispiness of the top and edges the best, and it's very moist inside! Good recipe.

Scallops with White Wine Sauce II
Delicious! Though I didn't follow the measurements (just eyeballed everything and kept trying it), I did use the ingredients mentioned. I did this based on what I had available so I used green onion instead of shallots, extra garlic cloves, added red bell peppers, used margarine instead of butter, and thickened with cornstarch. I also used shrimp instead of scallops (which I cooked in the sauce).I then put this on pasta. Very good recipe and will use again, thanks!
