Brownie Caramel Cheesecake
AMAZING! This was my first attempt at cheesecake and it was so so good. I used peanut butter brownie mix and baked it for 18 min. rather than 25. Rather than melting carmels and milk, i just used Smuckers carmel syrup, keeping it about a 1/2 inch from the edge. When I baked the cheescake I put a pan of water in the rack below to prevent cracking. When it was done baking I turned the oven off and let the cake cool in there with the door slightly ajar for about 1 hour. After that i placed it in the fridge until it was completely cool. It turned out so well and everyone loved it, I am defintely making it again!

Apple Crisp II
The recipe is more like 3 1/2 stars. I doubled the crust based on user reviews but found that with 2x the crust the 1 cup of sugar in the apples was WAY too sweet. Next time I will cut it down to 1/2 cup and keep the crust doubled. An addition I added was 1/4 cup of dried cranberries, they got all nice and juicy and it was really yummy. I also cut down the water to 1/4 cup. With changes, will be a 5 next time,

Baked Pork Spring Rolls
YUM! I love the fact that these spring rolls still had that nice crunch even without being deep-fryed. My filling was a combination of chicken, pork, and shrimp and rather than using lettuce and carrots, I used a bag of coleslaw. To save time, I used a food processor to gring up everything. This was my first experience making spring rolls and I struggled with the wrappers a little bit because they kept breaking even though I followed the instructions. I found it much easier when I filled a pie pan with lukewarm water and added a bit of cornstarch. After dipping the wrapper on both sides for a couple seconds it was much easier to fold.
