Easy and customizable. Was sort of like quiche, but a lighter option and delicious.

Easy French Dip Sandwiches

Reviewed: Jun. 24, 2011
YUMMY! This recipe was super easy and the BF was REALLY happy about it. I didn't have consomme, so I used beef broth and seasoned it lightly. Worked like a charm. Thank you for the quick and easy recipe, writergirl!

Reuben Sandwich II

Reviewed: Nov. 1, 2010
This was awesome. This recipe calls for sauerkraut to be drained. Some people must have missed that. I used pastrami, turned out awesome. Used a cast iron skillet and the sandwiches turned out beautifully and oh so yummy!!!! The layering here is good, and was the reason I looked a recipe up anyway. Also, if you're cooking stovetop, put the lid on the pan for a bit and that will help with heating the cheese/sauerkraut. Ours were the perfect temperature throughout.

Patti's Mussels a la Mariniere

Reviewed: Sep. 6, 2010
Awesome, easy, made with whatever we had in the cupboard. No tomatoes, dried parsley, red onion instead of green. Hard to wrong w/ butter, white wine and garlic. I personally like making these white wine sauces w/ sauvignon blanc. Bought a baguette to dip in the sauce, toasted it and went to town. Great dish for sharing.

Taqueria Style Tacos - Carne Asada

Reviewed: May 5, 2010
The marinade is soo scrumptious! You will definitely want it to sit in the marinade as long as time will allow. I recommend grilling/frying the steak before cutting it, and don't over cook the meat. Cheese is unnecessary. Lime is essential. Quickest way to toast the tortillas is by putting them directly on the burner, but you have to keep a very close eye on them and only let it sit for a few seconds.

Creamy Rice Pudding

Incredibly easy, especially using a rice cooker to prepare the rice! I added nutella instead of the raisins/vanilla/cinnamon and it was scrumptious!

This recipe is awesome! It was the first quiche I've ever made and it was surprisingly easy and everyone loved it and asked for more! I froze the second one and can't wait to pull it out and heat it up!

Ten Minute Enchilada Sauce

Reviewed: Oct. 28, 2009
SO simple, so tasty! I usually don't like enchilada sauce, but this was yummy! Because it is a quick recipe, it was hard to multi-task while cooking it bc I was afraid it was going to burn. Still wonderful. I used canola oil instead of vegetable oil, and any chili powder is fine.

Husband and sister loved it. Makes enough for 6-8 people. I used flour tortillas for the garnish instead of corn.

Black-Eyed Pea Gumbo

Reviewed: Oct. 6, 2009
Works out really well as stated, but I ended up adding some fresh jalapenos for a kick. This recipe makes at least ten servings, as opposed to the eight according to the nutrition information. Low calorie and very tasty! No need to add more salt!

Boilermaker Tailgate Chili

Reviewed: Sep. 21, 2009
Delicious and hearty chili recipe! It called for a lot of things I already had on hand, but it was still a little pricey to prepare. We used ground turkey and it was still scrumptious! Don't forget that you can adjust ingredients to suit your own taste, it is chili after all. Also, I think the negative reviews had to be from people who didn't let it cook long enough. There is a HUGE difference between chili that has cooked for 2 hours, and chili that has been cooked for 6-8 hours. I used an entire bottle of beer and no beef bullion (bc I didn't have any), skipped the paprika, added a little sriracha, jalapenos, habaneros and honey. WONDERFUL recipe!

Fried Green Tomatoes with Shrimp Remoulade

Reviewed: Aug. 26, 2009
I only used the remoulade from this recipe bc I found it after I was already making another fgt recipe. I hadn't ever had it before and I will now be making this for any dish possible. SO DELICIOUS! I had to sub a few things I had on hand for items I didn't have, but it still turned out well. Thanks!!!

Fried Green Tomatoes

Reviewed: Aug. 26, 2009
Great recipe! Fingers got nice and dirty re-dipping the tomatoes. I ran out of crackers, but it was good double-dipped in the egg and flour mixture. Definitely need more eggs. I only made two tomatoes and easily used two eggs.

Pasta with Kielbasa and Sauerkraut

Reviewed: Aug. 20, 2009
UNBELIEVABLE! I've always been loyal to kielbasa and kraut alone, but this recipe is outstanding. The flavors mix very nicely and the kraut adds the perfect saltiness to the dish. I would drain it for this recipe, but there's no reason to rinse it at all if you like kraut. Easy enough recipe, my boyfriend was able to prepare it for us!

Quick and Easy Stuffed Peppers

Reviewed: Aug. 20, 2009
Quick and easy way to make stuffed peppers during the summer if you don't want to heat up the house w/ the oven (and live in NYC w/ no access to a grill). Used leftover brown rice from another meal, used white onion instead of green, which added a lot of flavor, used diced tomatoes bc that's what we had, frozen corn, black beans instead of kidney, and chopped up a couple jalapenos we had sitting around. It did need some more flavoring like some of the others mentioned, so I threw some cayenne pepper in, some red pepper flakes, chili powder, and some seasoning salt to taste. Only had lite mexican shredded cheese, which worked perfectly. My boyfriend loved it and we'll definitely be keeping this one around!
