St. Louis Toasted Ravioli

Reviewed: Mar. 28, 2009
I did coat the ravioli with flour first for the 2nd half I cooked and those did a lot better! I also used panko bread crumbs and they were a little more difficult to get them to stick but the crunch was so nice! Fun treat.

The Best Unbaked Cherry Cheesecake Ever

Reviewed: Apr. 6, 2009
I loved the taste of it, but my crust didn't set up at all - I think next time I will use melted butter/marg. My husband loved it too and was very upset to come home and find I had eaten the last piece!!!

Burger or Hot Dog Buns

Reviewed: Apr. 6, 2009
Well, I killed my yeast on this one, so it started out bad, but I found adding the flour 1/2 cup at a time confusing and wished the recipe stated how many 1/2 cups you would have. In spite of the fact that they were as heavy as baseballs, they still tasted ok!

Belle's Hamburger Buns

Reviewed: Apr. 6, 2009
Very good directions in the recipe - thanks for the yeast reminder (I killed it in another recipe). They tasted great - took these and store bought ones to eat with sloppy joes at our small group and no one even opened the store bought ones!!

Dutch Cream Waffles

Reviewed: Apr. 11, 2009
These were very good! A little bit of work, but worth it. I got 3 belgian size waffles. Before I added the egg whites, the batter was more like dough and I couldn't fold the whites in, I had to use the mixer. It was still quite thick, but they cooked up nicely. I love their lighter color.

Pineapple Bread Souffle

Reviewed: Apr. 13, 2009
WOW! This was awesome! Very sweet and rich. Added 1/4 c of the juice because I put my bread on a cookie rack overnight and they turned into croutons - whoops! Used 6 slices of cheap white bread. Baked just perfect at 45 min. Will DEF do again!!! Update: just made this again for the 2nd time and used margarine (all I had on hand) and it was not as good as the first time with butter!!! Use butter!!!

Banana and Peanut Butter Pancakes

Reviewed: Apr. 14, 2009
I used whole wheat graham flour and these were good. I think I should have chopped the bananas smaller, but it was nice to get pockets of banana burst flavor! Needed to cook long to get totally done, and the batter was thin, but it cooked up just fine. The PB flavor was just enough, and there were flavor pockets of it too - yum.

Strawberry Bread

Reviewed: Apr. 21, 2009
Very moist and I like the pockets of strawberries - next time i'll try pureeing half of them. Also added a couple sprinkles of cloves - very good. Nice to have a recipe for those wilted strawberries!

Cinnamon Teacake

Reviewed: Apr. 21, 2009
This was great to use up my self rising flour - very quick and easy. Added some nutmeg and ground cloves too. Didn't use all the sugar - just sprinkled some over the top.

Caramel Apple Coffee Cake

Reviewed: Apr. 29, 2009
Very excellent recipe. Substituted no sugar added applesauce for the oil and heavy whipping cream for the milk. I also added a cinnamon swirl as suggested by an earlier review. The caramel sauce really makes this cake - I think next time I'll poke holes in the cake while still in the pan and pour the sauce over it then. Either that or just pour it over individual slices. Next time I'll also try it without the cinnamon swirl (I'm not sure if that really added to the cake). Baking time was good - maybe a smidge too long. Good apple flavor.

Pumpkin Muffins II

Reviewed: May 13, 2009
That was a lot of spices, but they sure taste good! Cut the sugar in half and used 2c. whole wheat graham flour, 1 c. unbleached white flour. Very yummy and great with Rhubarb Jam (recipe also on this site). Made mini muffins and got 48 LARGE mini muffins.

Melt - In - Your - Mouth Shortbread

Reviewed: Aug. 29, 2009
Followed the recipe exactly except I added 1/2t of vanilla and 1/2t salt because my butter was unsalted. I whipped the butter for a long time and they seemed good going in the oven. I love the taste of them, but almost all of them broke in half! I waited for them to cool on the sheets as recommended by other reviewers, but mine still fell apart. :( I also tried dipping them in chocolate which tasted great, but they weren't strong enough for it. Probably won't make them again. Very light airy taste - just wish they would hold together better!

Danish Potato Soup

Reviewed: Sep. 20, 2009
Awesome use for your ham bone! This was my first attempt with a ham bone and I had one left from a spiral cut honey ham. I just tossed all the random leftover ham and the bone in and cooked just like the recipe states except I added more potato and put the nutmeg in the soup (instead of a garnish - I was taking it somewhere). I did 1 and a half times the recipe and it turned out great! I did cheat and use pre-cut bagged cabbage and carrot! Made it for small group and everyone liked it. Very light and seemingly healthy soup - might try it with fat free half and half next time. Also, hubby said maybe next time throw in some ground sausage. Will def make again! Thanks for the great recipe!

Rhubarb Cheesecake

Reviewed: May 2, 2010
I love this cheesecake! I can't wait for spring when rhubarb is in season. It has the perfect blend of sweet and tart. I think the next time I make this I will try a graham cracker crust.... I also like to sprinkle a little cinnamon sugar on the crust before I put the rhubarb mixture on it. I've found that this does best if you make it the day before and let it firm up in the fridge. YUM!

Rhubarb Coffee Cake

Reviewed: Aug. 1, 2010
This was fantastic. I didn't use the topping becuz I made it in a bundt, and I used all whole wheat flour. I love that there is no vanilla/spices becuz it really lets the rhubarb flavor stand out, which I LOVE!!! Used frozen rhubarb and put more than it called for as well.

Made this for my Mother's 60th bday party - was very nice. Had a chocolate and coffee theme going, and this was the perfect foil. Def leave your ice cream/sherbet out for several hours and use as much Sprite as you like!

Indian Curried Barley Pilaf

Reviewed: Sep. 20, 2010
I was so excited to try this because I LOVE barley, and it did not disappoint. I changed the raisins and almonds to peas and carrots because I had just had a bad experience with both (kidney stone anyone???) and we need our veggies! I added 1/2 cup more chicken broth to help cook the carrots and added more curry per other reviews. Also used oil instead of butter. Fantastic taste - I really like the subtle allspice flavor. Ate this with some tilapia - DELISH.
