Gingerbread Pancakes

I must say, normally I really enjoy reading other people's suggestions and tweaking recipes accordingly. I found with this recipe that it wasn't a case of "add X and it will be even better." This recipe seems to be a disaster and needs many revisions to make the taste and texture even close to what it should be! After my MANY revisions, I couldn't even remember how I eventually got to the yummy gingerbread pancakes I ate this morning for breakfast! This is not a case of "if you can read, you can cook!"

Easiest Peanut Butter Fudge

I am a gal who loves to eat. So please take me seriously when I say this might be the best thing I have ever eaten! I followed the recipe to a T - with one slight addition, a candy thermometer! I made chocolate fudge first so when I got to this recipe I thought the texture looked really off and was concerned. NO reason to be concerned! This fudge was part of a Christmas gift basket that I have given several pieces and has met RAVE reviews from one and all! In fact, I have some left in the fridge to make up one last basket for a few friends I will see tomorrow night, and I can't keep my paws off! I will need to make another batch! (What a shame!) Cheap, easy, decadent and WONDERFUL!!!

Anniversary Chicken I

My boyfriend and I made this dish for his parents for Christmas dinner. Very yummy! I was surprised, as I did not think the flavors would go well together. Alas it was lovely and met rave reviews! The only thing we did differently is to use real bacon instead of bits, and when flash frying the chicken, instead of oil we just cooked them up in bacon grease. YUM!

White Chocolate Macadamia Cranberry Dreams

I fancy myself quite the cookie lady and this is one of my old reliable cookies! Folks call them my New England cookies and I get emails from my old boss several states away asking when I will send him some! The only thing I do differently is LOAD UP the chips and cranberries. I use a whole bag of each! The nuts I play around with every time! I have actually never used macadamia in these! Walnuts or pecans usually and I probably use more than I need to in the nut department too. SO yummy!

Peanut Butter Temptations II

I must have PB Temptations I in my arsenal because it is a tiny bit different than this one. My recipe taken from this website a few years ago calls for 1 1/2 cup of flour and cooks for 10-12 minutes. Also - have extra Reese's on hand. I find I usually use more like 50 cups. Do not press the dough into the cup, just drop a ball in there and you will be good to go. These area BIG favorite of anyone I have served them to! Just make that tiny adjustment to the original and you'll be in pb heaven!

Aunt Teen's Creamy Chocolate Fudge

I used to have MY fudge recipe and lost it years ago. I have never been satisfied with another recipe until this one. I omitted the nuts and used a disposable foil pan. WONDERFUL recipe! SO easy and cheap and decadent!

Kickin' London Broil with Bleu Cheese Butter

OK so you ever have one of those moments where you start cooking and realize your ingredients aren't quite right? That was me tonight. The good news is that even with the tweaks I had to make this steak was WONDERFUL! I had no onion powder so I omitted. I had garlic powder not salt so I added 3/4 tsp of salt. Cayenne looked funky so 1 tsp chili powder instead. THEN the cheese was gorgonzola not bleu. BAH!!! Still everything was amazing! 8 minutes both sides under the broiler medium, another 2 after slicing for my well done preference.

Soft Sugar Cookies II

These are pretty tastey and have a great texture. I do think next time I might add salt and/or vanilla as another reviewer suggested. The taste of these cookies as the recipe is written is very subtle.

Tex-Mex Beef and Cheese Enchiladas

This recipe was DELICIOUS! As others had suggested, I doubled the spices including the salt (not the sugar.) I can't imagine how bland and watery it might have tasted without doubling! I used a Mexican cheese blend instead of the traditional Tex-Mex American cheese. That is the only switches I made to the actual recipe. Though I did have some refried beans and a 1/4 of an onion on hand that I threw into the tortillas. OO and I found I had more than enough of all ingredients to just roll up 6 extra tortillas. SUPER yummy! I only gave it 4 stars because the spices needed to be doubled.

Coconut-Avocado Ice Cream

Ok, so this is the recipe I chose to christen the ice cream maker my boyfriend got me for my birthday. It is strange and wonderful! Strange and wonderful, I tell you! I picked up coconut milk by accident and decided to give it a whirl anyway. I think it solves the issues some had reported of the recipe being too sweet. It tastes like California to me :)

Chocolate Caramel Candy

I am known for my sweets ... cookies and fudge, cupcakes...anything sweet I bring around and folks gobble it up and rave about it. This recipe brought it to a whole new level. Yesterday I had a grown man tell me that he hopes this is what clouds in heaven taste like! AMAZING! They were a little sticky, but it is hot here so we just kept them in the fridge. OMG I think thins might be my signature candy now!

Chocolate Velvet Ice Cream

I omitted the extra chunks/shaves of chocolate for personal preference and added about 1/2 tsp of salt. WONDERFUL! Really super yummy! My 3 1/3 year old godson was beyond amazed at the yummy ice cream we made together!!!

Chocolate Chocolate Chip Cookies I

Ok so I am completely confident this recipe would be tops without any changes. Due to limited ingredients, I did make some adjustments. As suggested I used 1/2 butter and 1/2 crisco. Then with limited sugar, I used 1/2 cup granulated and 1 3/4 cup powdered. I omitted the nuts and made these with 2 1/2 cups of mixed chips (semisweet, butterscotch and white chips.) They came out soooo good, that I would make them with the strange sugar combination again next time, but look forward to trying them again with another combination of chips. Maybe chocolate and peanut butter. YUM!

The Best Banana Bread

Great recipe! As others suggested I added 1 tsp each of vanilla and cinnamon, and a dash of salt. I split the sugar 1/2 each of white and brown. The only other change I made due to limited ingredients was that I used 1/2 the suggested measurement of banana and subsituted apple sauce for the other half. SUPER yummy!

Lobster Mac and Cheese

Very costly, very labor intensive and it did not turn out. I am a pretty savvy home chef but this just didn't pan out. I abandoned my sweetheart on Valentine's Day to make a fancy pants dinner that was not worth the bucks or the precious time I spent on it. :(

Mom's Zucchini Bread

Wonderful bread! My Father-In-Law has been begging for zucchini bread for weeks! As he is ill and it is Father's Day, I decided to make it now! Thing is, I had never made it, and I wasn't sure if it was sweet or savory. I decided to make both, this and a recipe I found on another site. This was a much easier sort of normal recipe. The savory one was interesting but the recipe was a bit weird! Either way, sweet wins in my book! I didn't make any changes, and I just ate THREE pieces for breakfast!

Cinnamon Ice Cream

To say I have a sweet tooth, is a dramatic understatement. That said...this was WAY too sweet! And I found the flavor to be pretty one note! I recently got some fancy cinnamon and vanilla, and thought this would be a great place to showcase the fancy spices. Even with fancy Roasted Saigon Cinnamon and Mexican Vanilla, this recipe lacked depth of flavor. I think it needs one more ingredient for flavor but I can't put my finger on it. Maybe salt, ginger...? Also, while cooling, the custard formed a skin (like pudding.) I didn't realize the paddles in my machine wouldn't work this out, so I got small lumps in my ice cream. I don't think I would make this again...

Red, White and Blue Slaw Salad

WONDERFUL! Amazing...I made it for my 30th BD BBQ and it was a HUGE hit!! I used Kraft bottled coleslaw dressing. My only complaints have nothing to do with the recipe itself...coleslaw dressing was hard to find! I went to 3-4 stores! And the measurements on the shredded cabbage bag was confusing. I wound up with sooo much excess cabage!
