Baked Spaghetti Squash with Beef and Veggies

Very good recipe. I used only green pepper and I added a jar of marinara sauce to it. I used 2/3 of the jar in the beef/squash mixture then topped it with the remaining 1/3 of sauce and then finally topped with the remaining cheese. My whole family enjoyed it, including very picky 4 and 7 year old boys!

Glazed Apples and Sausage

I made this for 375 women this weekend for our ladies Christmas Tea. This was so good and I've gotten rave reviews. I did reduce the amount of onion to about 1/2 and found it a little too soupy. I strained the apples out after cooking and reduced the cooking liquid down to a more syrupy consistency. I also used turkey sausage links.

Fluffy Biscuits

I made 400 of these biscuits this weekend for our Ladies Christmas Tea. They were really not all that fluffy. I was a little disappointed in these since it had such high reviews. They didn't taste bad at all, but they were a little more dense than I prefer. I will keep looking for my keeper recipe. This is not it.

Brunch Strata

This is delicious. I made this for 375 women this weekend for our Christmas Tea. I've heard nothing but rave reviews and have had so many requests for the recipe. I followed the recipe exactly, except I omitted the green pepper. And I sprinkled some extra cheese on the top. I cubed the bread and let it sit out, loosely covered for 2 days to harden a bit. I mixed the bread into two of the pans the night before and it seemed to soak up most of the moisture. I was afraid they would be too dry so I waited and mixed the other 14 pans the morning of and let them sit for a half hour before baking. I found they all turned out the same. The ones I mixed the night before had plumped up and released some of the moisture during the night and were not dry at all. So, I will definitely mix everything the night before next time I make this.

Lemon Blueberry Bread

Chicken and Bacon Shish Kabobs

These were delicious. My whole family devoured them. I did as some suggested and I doubled the marinade recipe. I used 1/2 to marinade the chicken cubes and 1/2 to marinade the mushrooms, which I left whole. I marinated chicken and mushrooms overnight and used the marinade from the mushrooms to baste the kabobs as they grilled. I also used regular bacon instead of thick cut and it crisped up nicely.
