Pineapple Upside-Down Cake VII

I followed the directions for the recipe but screwed up by adding the full amount of water per the box cake recipe. Realizing my mistake I added some pineapple juice anyway. The cake came out extremely moist and dense like a pound cake. All around it was very good. Next time I may add a little dark carribean rum to the mix.

Italian Sausage Soup

Prepared as described but with more broth (had a 32 oz box, so why waste) and threw in some celery I had in the fridge. I used cantenelli beans too but otherwise it was a hit with everyone including children (10,8, and 5) Served with croastini bread.

Dad's Leftover Turkey Pot Pie

Wow! This is a winner. I didn't have celery or onion powder but it still came out great. In fact it was on par with Marie Calendar's pot pies. I look forward to modifying this recipe (to make it less viscuous ) Good job!

Paul's Southern California BBQ Sauce

I prepared this 3 days ago. I wasn't sure about it at first. It has a sweetness to it but then the heat creeps up the pallet. However...I said the rest in a sealed glass container in the fridge and after a few days the ingredients have mellowed. The sauce is thicker, tangier, and the heat is mellowed too. To me, it rivals most store bought sauces. Nice!

Loved this recipe. This is the 2nd time I used it. I didn't deviate from the ingredient list other than to use fresh pumpkin (Hey...it was Halloween and pumpkins were all over the house)

Hawkeye Pork Roast

This was a surprise. I only modified the ingredient list by adding a teaspoon of salt. Other than that, I did not deviate from the recipe. I cooked the roast to exactly 160 degrees and it was succulent. It even passed the "kid test." I will do this again. Thanks!

Green Bean and Bacon Saute

Very tasty. It was similar to the beans you get at any Chinese buffet. I also sauteed a little diced onion in mine. My oldest at it without complaining. The middle kid did so under threat. So it did pass the kid test...sort of!

Cola Pot Roast I

I did not follow the recipe to the letter. I had no stewed tomatoes. I used crushed tomatoes instead. I also used the substitute for dry spaghetti sauce(tomato paste/Italian seasoning/salt/pepper.) I also seared the meat for 4 minutes on each side as well. We also used the leftovers to make a shredded meat wrap the next day. Note: My wife got a bowl of the sauce and used it as a soup, it was that good!

Cheesy Drop Biscuits

Wow! This turned out very well. I was a little skeptical when preparing it but it turned out very good. It passed the kid test too. My wife thought it needed something sweet to balance out the flavors but I'll make them just as-is next time except adding the garlic powder.

Spanish Rice Original

Wow! What a delicious dish! I didn't change anything about the recipe. It passed the "kid test" but not by a majority (1 of 3 enjoyed it and got 2nds) The next time I make it, I'll use less of the bacon grease. Also, to me, it seemed a slightly bit too acidic. Though that may have been due to the tomatoes (we used produce from our garden)

Skewered Potatoes

Very tasty! I had red potatoes sitting around and wanted something starchy to go with the rib eyes I planned to grill. I saw this recipe too late to allow the potatoes to marinate for an hour but otherwise it came out very tasty!

Seasoning For Tacos

This tasted similar to a generic brand I usually buy. I went to make a quick meal of tacos and realized I had shells but no seasoning. So pack up three children and run to the store or improvise? I used this recipe but cut back on the salt as someone suggested. It was good. It passed the kid test and I enjoyed it. I made a double batch of the seasoning but will add some corn starch or xanthum gum to the remaining batch. GREAT job on this one!

Sweet Fried Summer Squash

Very nice recipe. I changed things a little by adding a little more salt and some pepper to the flour mix. I also added a little paprika. I used olive oil in a skillet and also used canola oil in a deep fryer. The olive oil came out the best. Lastly I topped my with some churizo. The sweet and spicy play was amazing. Good job on this one!
