Pumpernickel Rye Bread

Reviewed: Jun. 2, 2004
Mixed and kneeded in the Kitchen Aide with a dough hook for 10 minutes. Texture came out great. Not a large second rise in the bread pan, but the finished texture was right for a heavier bread and the taste was great. I am going to try adding gluten next time to see if the rise is better.

Banana Bran Muffins

Reviewed: Feb. 11, 2003
The recipe calls for walnuts but did not specify an amount. I substituted 1/4 cup flax seed and it work out well. Also, depending on the size of the bananas used, the mixture may come out too thin. I used large bananas and that was the case. I just added more bran to get the proper consistency. Perfect muffins for the church function, left overs went to work where they disappeard in an hour, with people asking for the recipe.

Butter Flaky Pie Crust

Reviewed: Dec. 3, 2002
What a great and simple recipe. The key to a great crust, keep the water ice cold and roll out the dough a few times. I did this a got a perfect crust and lattice top for my first apple pie. I loved it.

Oatmeal Chocolate Chip Pancakes

Reviewed: Oct. 1, 2002
I got different results. It seemed when the both sides of the pancake were cooked, nice brown finishes, when I cut into the pancake with a fork, the inside was still gooey. I tried cooking the next batch longer, but that just melted the chocolate chips making a real mess on the griddle. I do not know what I did wrong, but I do not have the patience to try this one again.

Wheat Bread with Flax Seed

Reviewed: Sep. 18, 2002
Bread machine recipes never work out the first time due to varying factors. The first time I tried this recipe the dough was too weak and the bread fell. After adjusting water, yeast, and gluten, it came out perfect. My adjustments: 1 cup water 2 tsp yeast 1 tbsp gluten 1 tbsp whole flax seed Bake on whole wheat cycle

Pumpkin Flax Quickbread

Reviewed: Jun. 13, 2002
Another great recipe using flax. I am always looking for good recipies that incorporate this fine source EFA's. Flax adds a unique texture to this recipie that holds moistness and combines with the pumpkin for a great taste. I added whole flax seed to the mixture for a more crunchy nutty flavor.

Bread Machine Bagels

Reviewed: Jul. 9, 2001
Wow. I never thought that making bagels would be so easy. I like a more fiber in my diet so I modified the recipe by using 1.5 cups whole wheat flour and 1.5 cups bread flour. Result, fantastic wheat bagels.
