Golden Rum Cake

Reviewed: Dec. 30, 2008
I made mini rum bundt cakes tonight. They look superb. the only change that I had to make was in the glaze. I only had 1/4 c. of bicardi rum left so I added 1/4 malibu rum to it. They smell delicious. Will update my review once I get a chance to taste it. Thanks for the easy to follow recipe.*Update* Tasted these yesterday,(NY-EVE) and thought it was just ok. tasted again today, NY day and it tasted better. So I agree with other posters, the longer they sit the better they get.

Marinade for Steak I

Reviewed: Jun. 4, 2010
Just finished preparing the marinade and it really does taste delicious! I can't wait to taste the final outcome. Will let ya'll know how my steaks turned out. I'll rate the marinade itself on taste to be 5 stars. The real test is how the steak tastes. OK> My steak marinaded for 24 hours. (not by choice but "life happens" anyway. I thought it was good. I will use again because I love the way the marinade tastes before you place the meat in it. A little less time on the marinade and it would have been perfect! I think.

Bread Pudding II

Reviewed: Jun. 28, 2010
made this for the first time and thought it came out great! I did alter the recipe a bit. Like others, I omitted the raisins, reduced the sugar to 1/2 cup using 1/4c. brown sugar and 1/4c. white. I used 1 round kaiser roll and 4 slices of white bread, used two small fresh peaches cut into slices and arranged on top. before placing in oven, I sprinkled less than 1tsp. of sugar on top. for the other ingredients, I followed the rest of the recipe exactly. consistency was good and not overly eggy. I gave it 4 stars because I think that this recipe is a good base to play around with other flavors ie.. extract flavors, liquors, etc..

Stuffed Peppers

Reviewed: Jun. 29, 2010
Very simple to make, tastey and everyone ate their dinner! That's what counts in my house. I did soften the peppers the day before in a pot of boiling water as well as pre-cook the rice at the same time. I also heated the assembled peppers in tomatoe sauce. covered with aluminum foil. Dinner was ready to eat in 20 minutes.

A-Number-1 Banana Cake

Reviewed: Jul. 8, 2010
Just popped the two pans in the oven. Like others, I reduced the brown sugar to 1/2 c. due to the sweetness of the Bananas. I also added 1tsp. Vanilla extract. Used sour cream in place of the buttermilk. Batter was very tasty. not too sweet. Will repost with final outcome. Wish me luck!!:) (will give a final rating based on outcome) when layers cooled, I brushed each side with banana liquor then spread creamcheese frosting then placed sliced bananas on top of that. Placed the other layer on top and iced. Daughter and I thought the cake came out really good. Thanks for the recipe! It inspired me to bake today!

As others stated, This is an exceptional cake as written. I paired it with the whipped cream, cream cheese icing. I baked and iced this cake in the am and had it for desert at night. IMO the piece of cake that I had the next day was even better!!

Whipped Cream Cream Cheese Frosting

Reviewed: Oct. 18, 2010
Used this icing on a carrot cake and on a lemon layer cake. The only change I made was replaced the sugar with 1 1/2 c. of powdered sugar and used very cold bowls and beaters. This icing needs to set up in the refrigerator before use. It is fantastic!!

Cinnamon Belgian Waffles

Reviewed: Jan. 8, 2011
Good recipe. I compared the taste of the waffles to the taste of waffles made from a boxed mix and they were almost identicle. I did substitute 2% milk in place of the buttermilk.

Chicken Marsala

Reviewed: Dec. 19, 2011
recipe makes a great base! I added some garlic, chicken broth, a little cornstarch mixture and a splash of heavy cream at the end. Fabulous!! I really liked the mixture of the marsala and sherry in this recipe. I only had sweet Marsala and the sherry toned it down a bit. Made this again... I did not put the cornstarch mixture just cooked juices down a little more and was as good as the first time I made it!

White Peach Sangria

Reviewed: Aug. 8, 2013
Used two 750ml bottle of Sauvignon Blanc, 1c peach schnapps, 1/2c peach vodka, 6 shots of lemoncello, 1 LB of white peaches and some halved red grapes. I am letting this sit overnight for a party on Friday, Will be adding some 7 up or Ginger ale and cut up strawberries to this right before I serve it. As it sits now without the Ginger ale, it is Way Strong! It definately needs to be cut w/ soda of your liking. It also really needs either the frozen lemonade concentrate or Lemoncello. I would not omit this. I dd however omit the sugar. IMHO it doesn't need it. Great recipe!! Cheers!
