Sweet and Nutty Moroccan Couscous

I made this on Mother's Day as one of the side dishes for dinner and everyone loved it! It was a bit too powerful for my personal tastes and would decrease the fruit and cinnamon just slightly (maybe 1/4c of each dried fruit and 2t cinnamon) - this is probably because I'm not very big on any sweets, so def my personal preference.

Rhubarb Cheesecake Dream Bars

I followed this recipe exactly except for the pan. I used a 9" round instead of an 11x7" I did need to let it bake for an extra 20 minutes because the rhubarb/custard filling hadn't set all the way after the first 35mins. The taste and flavors were great, but I did have to cut the sugar and it came out perfectly tart/sweet. I was told this was the best rhubarb pie a man had ever eaten and he's been eating rhubarb pie for over 70yrs!

Janet's Rich Banana Bread

LOVED this recipe! I recently moved and so my tried-and-true recipes (you know, the one's you're famous for) were all in storage :( I came to AR looking for a backup and was bummed about it. But, I was NOT bummed with how this turned out! I doubled the recipe and made 3 medium loafs. They weren't super sweet (I don't like super sweet BNB) and were super moist! My bananas were already way too brown and since they were a more liquidy, I did have to let these bake for an extra 15mins. The first loaf was eaten at a dinner, the second went to a friend and the 3rd got devoured at work :)

Chicken Asparagus Roll-Ups

Great recipe! I cooked this for my friend and her two grown sons and they loved it! I did modify the sauce just a tad and didn't use the panko crumbs on her piece since she's on a diet. Came out great and we agreed we definitely need to make this again soon!

Herb Rubbed Sirloin Tip Roast

Pretty good rub and didn't contain any MSG! Was a bit too spicy for me, but my housemate loved it! I used a 3lb round roast cut instead of 3lb sirloin tip roast cause the butcher was out of str. I wouldn't do that again as it took 2.5hrs to cook and came out a little tough. We did take it out after 1hr per the recipe, but it was def not done yet, so we popped it back in and kept checking it. Will try the rub again, but with less cayenne and on a diff cut of meat.

Chicken Adobo

This is the Filipino Adobo, so if you're looking for the Mexican/Latino version - this recipe isn't for you. I love Adobo and my friend's Lola (grandmother in Tagalog) makes the BEST kind! So luckily I had that flavor memory to go off of. This recipe yields a very vinegary Adobo when following the recipe exactly and takes longer to make than stated. I added an extra 1/4c soy sauce, 2t sugar and 1 clove garlic to the recipe. I let the chicken simmer, turning occasionally, for an additional two hours to soak up the new flavor of the sauce. I just made this last night and after the adjustments it tastes pretty close to what Lola makes. But the original recipe as it stands doesn't measure up.

This was my first try making naan and it vame out really yummy! Not quite like the authentic naan, but very close :) It was a hit at dinner and I'm making it again (large scale) for a themed potluck this weekend!

Three-Bean Salsa

Everyone loved this salsa! I made it as an after-church snack and it was gone in a flash! I had 5 different people ask for the recipe - Thanks Regina :) I would make it just a little spicier for myself, but it was perfect for those who don't like spice :)

Asian Noodles

This is not even close to an authentic Asian dish. The sauce isn't very good and the noodles should be authentic Asian noodles (you can find them in the refrigerated or dried aisles at any Asian market), that would help lend more authentic flavor to the dish. If you're Asian and/or like Asian food, I wouldn't recommend this recipe.

Chicken Tortilla Soup V

This was the perfect dish after a day of snowboarding! Instead of sauteing the chicken in oil, I halved them and let it simmer in the chicken broth until it was fully cooked. While that cooled on a cutting board, I sauteed the onions in a little butter and added in the garlic and cumin. Then I finished the broth by adding all the veggies, lemon juice and salsa, used more corn than called for and added kidney beans. Shredded the chicken breasts with a fork and added back to the broth. I did add a little salt because I used organic tortilla chips and also put the chips on top because they get soggy underneath. Topped with sour cream and served rice on the side, but everyone added it into the soup - it made it heartier :) Overall a great recipe and only made minor changes. Will definitely make it again!
