Mom's Zucchini Bread

VERY GOOD BREAD!!! I did modify the following after others suggestions: used only whole wheat flour, 1/2 oil - 1/2 unsweetened applesauce, 1/2 white 1/2 brown sugar, reduced total amount of sugar, increased the amount of zuchinni to double. Important DO NOT FORGET TO SIFT DRY INGREDIENTS!!! I did in my second batch and the difference in the texture is NOTICEABLE. Also, I had to let them bake 10 to 20 minutes longer than called for.

Shrimp and Grits Louisiana Style

I added garlic, and red instead of green peppers. I had no ham, so I used bacon instead. Wonderful. Oh, and I cooked the grits in my rice cooker.

Carne Con Papas

I loooove my Cuban Mother-in-Law's Carne con Papas, but, Darn it, she will not make them on-demand.... This came sooooo close to my Mother-in-Law's, that the first time I made it my husband thought I had frozen some of his mom's Carne con Papas and defrosted it for dinner. I have made mine many times in the slow cooker, High setting 5 hours. For those of you that find this bland, you have to realize that cuban food is not meant to be spicy like mexican food. Otherwise, there is plenty of flavor here.

Orzo with Chicken and Artichokes

Waaaaay too much orzo. I did not use red pepper flakes or bacon, and maybe due to that, the flavors where not unified until I added two cups of freshly shredded parmesan cheese. It is a great way to use leftover chicken and fresh spinach.

Hasty Chocolate Pudding

AWESOME, and super easy. Not too sweet, not too heavy, PLENTY CHOCOLATY, and EASY!!! I did add 1 tbsp of butter at the end and did not wait for it to cool. I served it with warm popovers as a filling. I will definetly make this again...

Grandma's Green Bean Casserole

Sweet Potato Casserole II

WONDERFULL AND EEEEEASY. I made it with canned yams (one 40 oz can) and subbed part of the OJ with chrushed pineapple in juice. I couldnt stop eating it!!!

No Time to Cook Chicken

This came out GREAT. Very tasty, very creamy, and very easy. I served it over noodles and brought leftovers to my sister's for exchange... a hit in both homes!!! I did add veggies in the last 30 minutes (fresh broccoli carrots, and muschrooms)

Chickpea Cauliflower Curry

Great Quick dinner. I made it exactly as per the recipe except I forgot the carrots. I agree it could have used a little chicken broth, to make the sauce a bit more runny, but it was good all the same. Served it with diced avocado. Not a drop left .

Red Pepper-Salmon Pasta

GREAT SAUCE!!! I think I made the Spanish (from Spain) version; We were all very concerned about mixing parmesan and cilantro, so I eliminated the jalapenos, and substituted flat leaf parsley for the cilantro. I then realized I had run out of Parmeggiano Reggiano, and had to substitute Manchego Cheese. I did add 1/4 cup of cream and doubled the amount of garlic. I served it over green spinach linguini as another reviewer had suggested. Beautiful dish... The best part is that my SUPER PICKY 2 1/2 year old GOBBLED IT UP (I served the sauce over shells for him)

Downeast Maine Pumpkin Bread

it was a tasty bread. My family found that the cloves were too overpowering. I will try again with half the amount of cloves. Next time I will also sift together all the dry ingrdients, as I found the bread not quite airy enough.

Broccoli Chicken Divan

I ate it, but I was the only one. The cream of broccoli was too much. It may be better with cream of celery or cream of chicken. I'll give that a try next time.

Wisconsin Native's Beer Cheese Soup

I loved the result, and my SUPER PICKY 4 year old is enjoying the lefovers as cheese sauce for Mac and cheese. I did follow one reviewer's suggestion and sauteed the vegies in the butter, then added flour, then broth and beer, simmered, then added milk and cheese.

Charline's Sweet Potato Casserole

I made it for an office Thanksgiving potluck and my coworkers raved about it and gulfed it down. I should have halfed the butter and the sugar and decreased (or eliminated) the evaporated milk.

Best Chocolate Chip Cookies

I have made this three times. I substitute all flour with whole wheat flour, and all sugar with brown sugar... My kids eat them up!!!! My super picky seven year old brags to all his friends that his mom makes the best chocolate chip cookies.
