Cha Cha's White Chicken Chili

VERY GOOD! Made it 4x's now. To save time, I put the chicken in a crockpot covered in chicken broth on low. Come home from work & shred the super tender chicken, then make the rest pretty much by the recipe. Only other thing I change is I blend a can or two of the beans instead of putting all 3 cans in whole. This helps make it thicker which we like. Note that the nutrition values are not accurate (more like deceiving). This makes about 4 quarts. The calories are based on 4 servings, but a quart is a big serving! I calculated that one CUP is approx. 230 calories...I have a big appetite & 1-2 cups of this is filling!

Absolute Mexican Cornbread

First time making it, & it was great! I took advice of other reviewers & only used 1/2 cup butter & 3/4 cup sugar, & my husband & I both thought it turned out great. I also think it would be great without the chilis, and/or with more cheddar. Taking to a Cinco de Mayo pitch-in at work!

Chicken Fried Chicken

Great recipe!! I have never been successful with fried chicken, but this came out perfect! The chicken was so juicy & the outside was mice & crunchy. I did add about a tsp each of paprika & garlic powder, and a little more potato flakes to the bag. I pounded out the chicken breast so they'd be even thickness, then cut into chunks. I then coated with flour first as another reviewer suggested, then dredged in the egg, then tossed in the zip lock baggie. Make sure your oil is very hot before putting the chicken in. Awesome recipe!!!

Chicken Breasts Pierre

Very good!! Has a small kick to it. We only used 3 chicken breasts but followed the rest of the recipe (did add half a sliced onion with the tomato mixture). Next time, I would cut down the chili powder if I use less chicken again.

Slow Cooker Chicken Taco Soup

This soup was awesome!!! Very rich flavor, and the chicken was very tender. Next time I will add some diced jalepenos or something to give it more of a kick, because we like spicy.

Alfredo Sauce

Restaurant quality!! We didn't change anything to this recipe, and it turned out wonderful. We eat chicken fettucine alfredo often, and this is the first time we didn't use a store-bought jar of alfredo sauce. Well worth it, and only took a few extra minutes than usual. Highly recommended!

Broccoli Cheese Soup

Turned out great! I added a head of chopped fresh broccoli along with the frozen broccoli. I took the advice of others and only used 3 cans of broth at first, then used the 4th can of broth in place of the water to mix with the cornstarch. I also added some pepper, used half & half instead of milk, and towards the end mixed in a package of shredded cheddar cheese.
