Steel Cut Oats

We've learned you can also cook steel cut oats in a rice cooker. They key is to let them soak in the rice cooker overnight. Ratio is 1 cup oats to 2 cups of water. Easy and fast! (This is my original recipe)

Mardi Gras King Cake

Not as good as we had hoped. It didn't seem to raise very well. We cooked the first half, and when it came out, we decided to let the second half raise longer...still very thin. Not sure what went wrong. The filling was good, though, and the kids loved it.

Shrimp Lemon Pepper Linguini

Really yummy. We did cut down the pepper and lemon a bit, and made an extra half of recipe of sauce per previous reviewers. We will make this one again!

Eggplant Supper Soup

Very good and pretty easy. I was out of celery so omitted it, and added green pepper and yellow squash because they needed to get used. Delicious! We will make this again.

Eggless Sweet Potato Casserole

Ratatouille

We really enjoyed this...very tasty and very easy. My 8 year old helped chop the veggies and it only took 15 minutes to prep. I used red pepper instead of green (didn't have the green pepper) and served with brown rice. I also sauteed the onions with the eggplant, and baked it an hour instead of 45 minutes, based on other reviews. My 8 year old loved it (and he doesn't usually like any of the vegetables in the recipe). Of course, we watch Ratatouille, the movie, while we cooked!
