Bangin' Smokey Beef Brisket

This was really good and I followed the recipe until the end. Upon tasting it, the texture was really tender, but the flavor was a little more "roast like". To suit my taste for brisket, I shredded it, added some of my favorite tangy bbq sauce and returned it to the oven to heat through. This made it great for us--my 5 yr. old loved it too. Yum!

Baked Zucchini Chips

This reminds me of a recipe I grew up with, but healthier since they're not sauteed in lots of butter. It does help to spray them with cooking spray. The change I made was to add finely crushed saltine crackers to the breadcrumbs (I use more crackers than breadcrumbs) It gives them a nice flavor and extra crunch.

Bacon Wrapped New Potatoes

These were so good. I used reduced sodium bacon which was very thin. I didn't use the ranch, instead I added pepper, dried chives and granulated garlic. Also, I baked them at 400 and the bacon was crispy. Avoid my mistake--I tried to put the toothpicks through the edge of the potatoes at first which resulted in broken off, embedded toothpicks--oops!

Joanne's Jalapeno Chicken

This was not bad, but not what I expected at all. I made this because of the jalapeno part of it and was really disappointed at how sweet it was. Maybe I should have realized it with the pina colada part, but I was hoping that the flavors would compliment each other somehow. It makes a lot of sauce, so I quickly made some egg noodles to mix in. I would recommend some rice or couscous instead--maybe some grilled fruit. Just remember it's very sweet and I personally didn't even taste the jalapenos.

Buffalo Chicken Soup

My husband and I loved this soup. I forgot to buy celery, but didn't miss it. I used leftover chicken from the Spicy Rapid Roast Chicken from this sight, which I HIGHLY RECOMMEND! It was easy and outstanding. I got two great meals from a $4 chicken. If you like buffalo wings, you'll really like this soup. Try it with a salad and the dressing you usually like on your wings--ranch or blue cheese. Enjoy!
