Tomatillo Soup
My alterations:
2 pounds tomatillos
2 cups chicken broth
I simmered uncovered to reduce and thicken a little.
After pureeing, I stirred in 2 ounces shredded Pepper Jack cheese while it was reheating.
Delicious! Good for something different.
