RO's Spaghetti and Meatballs

Just made the meatballs: I was worried they'd be too sweet, so I made sure to get plain graham crackers (NOT honey or cinnamon), used a bit more meat, some salt, pepper, minced onions, and some fresh basil in the meat mixture. It was great and had more of a hint of sweet than an overpowering, which definitely would have been the case if not for the changes I made. It smelled wonderful while baking, too.

Spinach Pancakes

Eh...there are better recipes for something like this out there, even after adding onions, garlic powder, and parmesan. I thought it was a much more flavorful veggie pancake. I know everyone serves these with a cream-based dipping sauce like sour cream, ranch, etc, but it's very similar to a Korean snack, so I eat mine with soy sauce on the side.

No Time to Cook Chicken

this dish was good...it did taste like a homemade version of a tuna-helper dish with chicken. which we liked, but i could see not being good for others. made exactly to the directions (added some carrots, other veggies) and everyone liked it..but agreed it was very tuna-helper in flavor but tasted just a little healthier

delicious flavoring, though the meat was a little less tender than i'd hoped. my korean mom uses the same ingredients for flavor, but i believe she uses ribeye instead of flank steak.

Chicken Noodle Casserole

Good, not great. It tasted very much like a tuna helper in flavor, but obviously would be a bit healthier. If you liked tuna helper growing up, which I did, it's good...but not necessarily something I'd recommend serving to dinner guests.

Slow Cooker Chicken and Dumplings

My husband LOVES this recipe. One thing I did learn after cooking it a few times is that once you do put in the biscuit dough, you need to mix your crockpot regularly. I found that sometimes the dough close to the bottom & walls would overcook and we had pieces of overcooked bread-like biscuit in the dumplings...not a very pleasing texture in this stew.

Fig and Olive Tapenade

This was a hit at our Christmas dinner as an appetizer. I had almonds on hand, so I toasted them and used them to top the tapenade, and it was great. Served on baguette toast that I made by spraying a little oil on small slices and baking them for 10 minutes at 350.

Perfect Pumpkin Pie

Perfect texture and flavor! Took the advice and took the pie out when a knife 1" from the crust came out clean. Everyone was impressed there weren't any cracks in the middle.

Baked Zucchini de Provence

Not thrilled with this recipe - very bland. If you have these ingredients on hand, I highly recommend making zucchini chips instead - almost identical ingredients, but instead of a casserole dish, you lay them on a baking sheet individually and turn half-way through cooking. It allows for a lot more flavor on every slice.

Boiled Bagels

These were great! My family tried was SUPER impressed - including my hard-to-please mom. Obviously season as desired...I made some asiago bagels, some everything bagels, and some chocolate chip bagels. People seem to be very impressed when you say you made them from scratch. I also appreciate that it's one of the shortest prep/wait times I've seen for a bread with yeast.

Mexican Rice II

LOVED this! I added frozen vegetables into the saucepan first and made sure they cooked a little before adding the rice, which added some great color and additional flavors. I also added a little Adobo seasoning to the garlic salt and cumin. Also, when I put in tomato sauce, I put in some salsa. You could definitely taste the difference the salsa made and it was DELICIOUS. I'm never buying preseasoned mexican rice again!

Hawaiian Sweet Bread

I followed instructions exactly but stirred while heating the liquid in the saucepan so the milk didn't curdle like another user reported. This bread has good texture, but tastes distinctly of ginger, so make sure you like ginger. I'm not very into this bread, but my husband likes it.
