Buttermilk Wheat Bread

I cook this in a bread machine and it works great. I also replace the buttermilk with 1 cup of plain yogurt mixed with either water or milk to make 1.5 cups. I don't normally have buttermilk in the house, but I always have plain yogurt. It works fine.

Sweet Potatoes 'n' Pears

I made this for a dinner party and it went over well. The pears are a subtle flavor. I didn't mix it as much as it says in the recipe because I like a little more texture in my sweet potatoes.

Apple Crumble Tart

My only problem with this recipe was measuring 3/8 cup. I ended up upgrading to 1/2 cup, but then I had too much toping. I should have rounded down to 1/4.

Syrian-Style Lentil and Spinach Soup

I added more spinach and the recommended cumin. We really enjoyed it. Ours came out less like a soup than like a thick stew, though... and I added in additional water and skipped the step with the flower.

Eggplant Parmesan

This is the first summer I've had eggplants in abundance, so I've never really done much with them before. We tried this recipe because it doesn't involve frying the eggplant. It's AWESOME. I've made it probably 4 or 5 times. The only change I make is that I add more garlic, but I pretty much do that with all recipes.

Artichoke Spinach Lasagna

This is an awesome dish. However, definitely don't go into it thinking "italian tomato-based lasagna". It has several strong flavors that are good together, but they ARE strong flavors.

Oven-Roasted Asparagus

This was awesome. I reduced the amount of olive oil by about half and would reduce it even more next time. I didn't have quite enough asparagus, so I added some broccoli as well. Both of them were done to perfection in 12 minutes. I loved the flavor!

Butternut Squash and Shiitake Mushroom Wild Rice Risotto

I used dried mixed mushrooms because I have a huge container of them from Costco. I also had some other random variety of squash that I used in place of butternut. It takes a while to cook (being risotto), but it was worth the effort.

Amish Meatloaf

Very moist and juicy, full of flavor, but the reviewers who have said that it's sweet are totally right. I left the sugar out of the glaze, which was a good decision. I would try this recipe again, but leave the sugar out of the meat mixture as well.

Steamed Radishes

These totally don't taste spicy like radishes anymore. They taste more like steamed broccoli stem. I would recommend cutting larger radishes in half (several of them exploded in the microwave). I had a regular-size bunch of radishes and decreased the cooking time by half, but I would cut it down to maybe 3 minutes next time.

Banana Bread - Quick Bread for Machines

Maybe it's a problem with my bread machine, but this tasted more like bread flavored with bananas than was I think of as "banana bread". It was a lot chewier than I expected. I would recommend that you really watch how long it's mixing for; maybe I overmixed it.
