Roasted Brussels Sprouts

This was wonderful! We have NEVER had Brussels Sprouts before and thought we should try it the pure way before adding other things to them. No need! These were delicious. I followed other reviewers and changed the oven to 350 and time to 20 min. Halved and took out the hearts and now I'm craving more!

Sweet Restaurant Slaw

I used mostly mayo instead of miracle whip and only put half on and then after a couple hours drained it and added the rest of the sauce. Pretty tasty!

Summer Squash Puffs

Yum! Instead of cooking the squash I ended up just microwaving them for a few minutes and then puree in the food processor. I then let it sit in a fine mesh strainer to drain. I strained out about 1 cup of liquid! When I mixed it all together it was perfectly moist and held together well while frying. I added cheese like other suggested and only used corn meal and sugar in place of corn bread mix (didn't have any). Very yummy!

Asian Glazed Chicken Thighs

Really tasty, a little too spicy for my liking. I would do 1 1/2 TBS of the Garlic Chili Sauce next time. I ended up only needing to cook the chicken for 20 minutes and it was nice and moist. These would probably taste great on the grill! The sauce didn't thicken too much for basting. I might try thickening with cornstarch next time.

Slow Cooker Scalloped Potatoes with Ham

Good flavor but the potatoes didn't cook! I used a mandolin to slice my potatoes very thinly and cooked on high for 4 hours and they were still crunchy. I put it on for about 1 1/2 hour longer and the potatoes were cooked through but the cheese had turned dark and crunchy on the sides. The flavor was very good. I probably added more onion since I used a full one sliced very thinly and added a little more salt after tasting it halfway through. I will probably make it again sometime.

Eclairs II

These were so easy yet impressed a lot of people. I followed the directions exactly and they were delicious. I would have preferred if the cream were a little thicker, it was a little thin and oozed out. Maybe less milk in the pudding mix or allowed the pudding to thicken in the fridge before mixing the whipped cream. The flavor is divine!

Slow-Cooker Corned Beef and Cabbage

I can only comment on the temperature since I didn't add anything but 4 cups of water (and it was wonderful!). I ended up cooking it on high for the 8 hours as the recipe says and it was moist and falling apart (which was my goal). There were a lot of reviews that suggested cooking it on low. The high temperature makes it tender and delicious!

Sweet and Sour Chicken I

I've been looking for a batter to make Chinese chicken for a long time. This one was delicious. I did add some salt and pepper and garlic powder to the chicken before adding it to the thick batter. It helped a lot since the batter is not too seasoned. The fried chicken can be used as a base for a lot of different dishes or just plain chicken nuggets. I doubled the sauce as some suggested but ended up having too much. I didn't mix it together since I didn't want the chicken to get soggy, so that may have made a difference with the extra sauce. Took it to a family event and it was enjoyed by people from 3 years old to 63 years old. Will definitely make this again!

Grandmother's Buttermilk Cornbread

Followed the recipe exactly but baked in a preheated cast iron skillet for 20 minutes. It tasted very good and I enjoyed it plain while my kids and husband like to slather butter and honey on it. It was moist while still being cornmeal-y unlike the sweet cornbread recipes that I have had before that basically feel like cake (which isn't bad either!) I would make this again.

Leek Dip

We enjoyed this recipe! I used 1 cup of Miracle Whip and would probably cut back a little next time because we found it too creamy and rich with the amount I put in. Everything else was great and we followed the recipe as written. We served this dip with plain and garden vegetable Ritz Crackers.

Chicken Cordon Bleu II

Very tasty! I made 13 for a party of 11 adults and 6 kids and it was all eaten up! I ended up doing a quick pan fry and baking them in the 350 oven for 25 minutes. And then making the sauce separately using the same pan I did the quick browning in. Delicious!

Smoked Gouda and Leek Chicken

Nice recipe with a great presentation! I shredded the cheese and then wrapped the cheese and the cooked leeks with the prosciutto. I also ended up breading the chicken with panko. My family (4 hungry boys) all liked it!

Slow-Cooked Taco Shredded Beef

Following the recipe exactly, I found the meat rather tasteless. It definitely needed salt. The chuck roast didn't shred very well but that could just be the kind I got. This recipe wasn't horrible, but it didn't make it into my recipe box!
