Sour Cream Lemon Pie

I made this for our family's Easter gathering and everybody said it was so good! I followed the recipe exactly using a homemade graham cracker crust. It was beautiful, delicious and gone in no time! One of the reviews here said it was sloppy; I wasn't expecting it to be firm and of course it's not a clean slice like lemon meringue or jello or something, but I thought it presented pretty well. I put a ring of raspberries around the edge just to add color because it was a special occasion, but it would have been perfectly fine without.

Blueberry Peach Muffins

Delicious!! I used nectarines and strawberries and left out the salt (as I always do). Also I didn't use the topping (I've had too much cinnamon lately). Yum, yum!

Three Cheese Baked Pasta

This was absolutely delicious! I think the sour cream is what makes it stand out from everyday pasta and tomato sauce. I didn't have provolone cheese, so I used mozzarella slices instead. So a two cheese pasta instead of three, but still yummy! I could have eaten the entire pan if my stomach had room. Speaking of which this recipe makes A LOT, so there's enough for freezing or leftovers if you are a three person family, like us.

Grilled Cheese Sandwich

I already knew how to make a grilled cheese sandwich, but came across this recipe as I was searching for a quick supper to use up some things I had in the fridge. It sparked my imagination, and here's what I did: Sliced and salted eggplant and while waiting for the salt to do its work, sliced the bread and prepared a salad. Rinsed, patted dry and then fried the eggplant in olive oil. Since I already had the oil in the pan, I used it instead of butter for the "grilling" and the sandwiches were composed of grated mozzarella and fried eggplant with a bit of leftover tomato pasta sauce spread on the inside of one slice of the bread. So yummy!

Ethiopian Cabbage Dish

I loved this recipe! I don't generally like the flavor of cumin so I reduced it by 1/2 but was still a little nervous about trying it. In the end I was so pleased with the dish. I served it as a main dish but then realized there is absolutely no protein in it, so made sure to drink milk with it. Can someone suggest a good protein side or main dish to complement this?

Lemon Snowdrops

The flavor and idea of these are great, but the recipe really needs to be more specific about the size. I made one inch balls which I flattened but they still came out thick. However I don't know if it's worth it to make them smaller because they were kind of messy to fill. I will say that I was pleasantly surprised at how the filling gelled and did not drip out when I took a bite. They hold up nicely so far, though I can't imagine trying to transport them.

Creamy Veggie Vermicelli

This recipe is fantastic and a great time saver! I made it in short order after getting home late from errands. It was plenty creamy just as the recipe says. The lemon was overpowering even though I only used 1/2 TBSP. Next time I will use garlic and onions for flavor instead of lemon, but that is just a personal preference for garlic. Overall the recipe is a keeper!

Microwave Popcorn

I love this idea! I can't believe I thought there was something special about "microwave popcorn" to make it pop in the microwave. We hadn't had popcorn in a while because I refuse to by packaged popcorn and am always reluctant to pop a pot for just my husband and me. This is so quick and just the right size serving. I've been making a lot more popcorn the past couple weeks since I found this recipe!
