Chicken with Asparagus and Roasted Red Peppers

Reviewed: May 31, 2009
Very easy, great flavor. I used 2 cubes of chicken broth, added 1/2 t of thyme. Used can of diced tomatoes with lime and cilantro (Ro*Tell). Used Laughing Cow Herb&Garlic triangles instead of mozzarella. My husband, who usually says things are okay, said this was pretty good!

Mom makes this for a easy meal when we all get together, everyone loves it. Like suggestions to add garlic, will try that next. Great meal to take RV camping.

Cake Mix Cinnamon Rolls

Reviewed: Feb. 6, 2010
I needed rolls fast, so I followed the recipe using LEMON cake mix, but after the first raising, rolled them into fist-sized balls, rolled in butter, then in cinnamon/sugar and put in greased 9X13 stone. Put them in cold oven, brought it to 375 (so they raised while the temp raised) and baked for 20 minutes once the temp reached 375. Perfect! Will be using this and experimenting with different cake flavors...SPICE cake is next!

Slow Cooker Apple Crisp

Reviewed: Sep. 20, 2010
Added 1 c. oatmeal; it was a hit! Because it was for a potluck after work, I cooked the apple mixture on "warm" all day, when I got home from work I added the topping mix I had made that morning and cooked it on high for 2 hours. Nummmy!

Lemon Snowflake Cookies

Reviewed: Jan. 8, 2011
Melt in your mouth delicious! I used reduced fat spray canned whipped topping, turned out great! To keep dough from being so sticky, dip your teaspoon in powered sugar before you use it to get the dough out and roll in powdered sugar. Helps keep dough from sticking to spoon. Thanks for a new favorite!

Gooey Butter Cake I

Reviewed: Jan. 9, 2011
Wonderful! Made this for coffee hour at church and many compliments/requests for recipe! Only change I made was I used 3/4 c butter and cooked for 30 minutes, take out of oven when still moist. Make sure you grease the pan well, they came out of stoneware beautifully. I used Butter Pecan mix for one pan and Red Velvet mix for the other, both wonderful!

Hash Brown Casserole III

Reviewed: Jan. 23, 2011
Made for pot luck, many compliments. I did make it in a crock pot, added garlic and other seasonings as others suggested, and a can of undiluted french onion soup for the beef broth. Will definitely make again, loved that it didn't have cream of anything soup in it.

Shrimp Scampi Bake

Reviewed: Feb. 9, 2011
As recommended, used half the butter. Doubled the garlic (I do in everything). Used Honey Dijon mustard I had on hand. Butterfly'd the shrimp so more exposure to the seasonings. Made ahead and let marinate in the fridge in stainless steel bowl several hours while I prepped the rest of dinner. Put the bowl on the grill for 15 minutes with the steaks. Lots of compliments!

Texas Christmas Pickles

Only 5 stars? :) These are GREAT! I added onion slices, as I love onion. Used Nally Garlic Slices to save time, they didn't turn mushy for me. Did I say these are GREAT? Thanks for sharing the recipe KIKI810

Super Short Ribs

Reviewed: Nov. 9, 2011
Loved these. Made some variations, for what I had on hand. Used roast, cut into large chunks. No chili sauce, so used small can tomato paste and Sriracha sauce, about 1/4 cup. Simmered in a frying pan on the stovetop. I used the pineapple juice, which may have made it a little more soupy, but it was wonderful! Thanks for the recipe; am going to get chili sauce and try that, but will always add Sriracha!
