Gingerbread Men

Made this with my 8 year old daughter and she and I loved it! Not a true gingerbread taste, but that wasn't really the goal. We wanted to decorate them (and eat them). I followed the recipe to the letter and had great results.

Sweet Potato Casserole I

This recipe was excellent and I used only 1/2 cup of white sugar and 1/4 cup butter in the sweet potato mixture and 1/4 cup butter in the topping. My family loved this - made it for Christmas dinner.

Easy Meatloaf

Made this for my dad's birthday (for family). Sautéed diced carrots with onion & garlic before adding to meat, milk, herbed breadcrumbs & egg. Doubled the ketchup, brown sugar, mustard (added Worcestershire) topping and even saved some to put on top of meat after slicing. Had to bake for 1 hr, 20 min. Will definitely keep this recipe!

Sweet, Sticky and Spicy Chicken

I have attempted other Asian inspired dishes, but with no success....until this recipe. I took the advice of other reviewers and put sauce in a small pan to reduce, as it takes a good 10-12 minutes to reduce. I didn't have hot sauce so I improvised with chili powder to give it a little spice. Also, chopped yellow pepper and sweet onion and sautéed in oil for 3-4 minutes before removing and adding chicken (placed in bag with flour to coat first). Having the oil heated on high helped with searing the chicken. You may need to add another tblsp of oil after removing veggies. After chicken was cooked through, I added sauce and vegetables to combine flavors. Brown rice from TJ's was a perfect match to the dish.

Baked Apricot Chicken

I tried this recipe using boneless chicken breasts. Baked it for 45 minutes. A little dry, but the flavor was very good. Also, took the advice of one review and used Catalina dressing. Would try it again with thighs.

Chicken Enchiladas I

Based upon other reviewers, I made a few modifications. Cubed the chicken before sautéing in the pan - sprinkled chili powder and pepper on chicken to add flavor. Used 1/4 cup of sour cream and 1/4 cup Greek yogurt along with the cheese and added sliced black olives. Topped with mild chunky salsa (Trader Joe's) and cheese, as others stated the water and tomato sauce made it soupy. It's a little dry - next time I'll try adding enchilada sauce.

Delicious Ham and Potato Soup

This rates as one of my favorite soups. Just enough creaminess and excellent flavor! Made it for my husband and he too gave it a thumbs up. Used slightly less butter (4 Tbsp) and 1% milk. Will definitely make this again!

Awesome Slow Cooker Pot Roast

Great staple recipe. Made this for my husband and he had seconds and leftovers the next day for lunch! (That rarely happens.) This recipes is good for BBQ beef sandwiches the next day. I highly recommend giving this one a try.
