Strawberry Bread

Yum! There's only the two of us so I halved the recipe. Like some of the other reviewers I decreased the oil (1/2 cup for my little 1/2 batch) and used 1 1/2 cups of chopped strawberries. The 1/2 recipe made 6 gorgeous muffins and 1 mini loaf of bread. I took the mini loaf to a friend's for brunch and kept the muffins just for us!

Beef Tenderloin With Roasted Shallots

This was good - made it for New Year's Eve dinner for a crew of 12. Made with a rice pilaf as one of the other reviewers suggested. Also made the Alaskan Baked Salmon w/ Pecan Crunch topping and that got RAVE reviews. Anyway, I did keep the extra sauce and ended up using as part of the base for a vegetable beef soup (with the leftover meat) and that was delicious.

Alaska Salmon Bake with Pecan Crunch Coating

This was fantastic - I made it for New Year's Eve dinner this year up on the ski slopes at Mt. Snow in Vermont. Used one large salmon fillet (rather than individual ones) since I was feeding 12 people for dinner. It came out beautifully and I couldn't believe the number of compliments that I got - even from folks who don't usually like salmon. The best? People asked for me to make it again the next night! : ) Thanks so much Chris for sharing. This one's going into "my usuals".
