About this Cook
My husband and I enjoy trying new recipes. He is a great help in the kitchen and we enjoy cooking/baking together. He makes cooking and baking fun.
My favorite things to cook
green chile chicken enchiladas, fajitas, New Mexico style red chile, lasagna, spaghetti, chicken / beef tacos, salsa
My favorite family cooking traditions
My mom makes a very tasty posole with pork and red chile. She usually makes it around Christmas time and once in a while throughout the year. I have yet to make my posole as tasty as hers but am trying.
My cooking triumphs
Chicken Flautas, (rolled chicken tacos)
My cooking tragedies
Too many to mentions : )

White Chocolate, Chocolate Cookies
Only one very big problem: I could not stop eating these and I totally blew my diet!! SCRUMPTIOUS!! I did as others suggested and used 1 tsp baking soda and 1 tsp baking powder. I used half white chocolate chips, half mini semisweet chips and added some walnuts. Try this recipe, you will not regret it. I also increased baking time to 12 min.

Too Much Chocolate Cake
I have made this cake about five times and it never fails to disappear very quickly. I have made it for family and friends and everyone loves it.

Hearty Breakfast Cookies
My husband has high cholesterol so I had to tinker with this recipe to suit his needs. I used smart balance oil and applesauce instead of butter. I used egg substitute instead of eggs. I also used Smucker's organic peanut butter which is lower in sat fat. Husband doesn't like raisins, I used 1 cup of walnuts instead. Oh and instead of wheat germ we used milled flaxseed which is very high in omega 3. Cookies turned out flavorful and filling. Thank you for the basic recipe.
