Broccoli Rice Casserole

There are problems with this recipe as written!!!! Step #1...Watch the video. You do not precook the rice....that is why it calls for the water. This is the reason some people had problems with the recipe. I always substitute something else for water also.......milk, chicken broth....whatever.

Ham and Beans

I would give this 5 stars after the changes. I made these today with leftover ham bone and ham from Christmas dinner that I had in the freezer. I just used a regular cooking pot rather than a crockpot, so did not soak them overnight. I just bring them to a full boil, then reduce heat to medium low and simmer till tender. I have to agree with other reviewers that the sugar needs cut down by at least half for my taste, but some people like sweet beans. I am not a big fan of ham, only have it once a year usually, so my suggestion is to cook the beans with meat from "country style" ribs. Just make sure you remove all bones. I love this meat in my beans!

Microwave Corn on the Cob

I cooked 5 ears for 10 minutes in the husks in my 1200 Watt microwave without wrapping them in anything at all, and they were very good. I did turn them this time halfway through. The only prep I did was to remove the outermost husk of each ear and twisted off the top silks. As soon as they are done, I remove them from the microwave, let them set a couple of minutes, take them to the sink and remove the outer husks, twisting off at the bottom. Then I quickly run them under running warm water to remove the remaining silks, pile the ears on a paper towel lined plate to drain, and eat! Fresh super sweet corn was wonderful, especially since it was so quick and easy!

Tuscan Chicken Simmer

I fell in love with Pesto after fixing this recipe! I did leave out the tomatoes because I do not like them hot. I do think the next time I fix this, I will use the frozen chicken breasts that you buy in a bag because I think they are easier to pound a little flatter.....I think it would be even better then. The calorie count shown here is not the same as on another recipe site, however. That one shows 410 per serving..... which makes more sense considering the fattening ingredients. P.S. You need to let the chicken stand at least 10 minutes in the covered skillet to let the cheese melt and soak in the sauce.

Cheesy Vegetable Soup

I have made a variation of this soup three times so far; the first time I used one can cream of chicken soup and one can cream of celery; I added minced dried onion, and I used 1 can of evaporated milk instead of regular milk. This was because these were things I had on hand at the time. It turned out great! The second time I used two cans cream of chicken soup and frozen mixed vegetables instead of California blend with the dried minced onion and evaporated milk. Once again, it was great! The last time, I doubled the recipe I had used the first time except for the canned soup...I used two cans cream of chicken and one can cream of celery. Still delicious!
