Chipotle Crusted Pork Tenderloin

We brined the pork before hand and this kept it nice and moist throughout the tenderloin. I will never do it without this first step. Thought the recipe was fantastic! Only difference was that we didn't have chipotle seasoning on hand so just used regular chile powder. Lots of leftovers since we cook for 2, but looking forward to my lunches this next week!

Dad's Magic Bar Olives

Fantastic! Just made my first (of what will be many) batches. I made them with Spanish olives. We ate some plain and some with ranch dressing. YUM!

Love them, love them, love them! What a fantastic meal! I will be making a double batch for a party this week. It took me quite a while to get all the chicken shredded but well worth the work.

Mushroom Pork Chops

A great staple meal for us! A very easy and quick meal on busy nights. We scaled the recipe down for 2. Sauteed the mushrooms and onions with a little minced garlic poured it over the chops and placed in the oven. The flavor was wonderful and we had TONS of sauce even though we only used 1/2 the can of cream of mushroom soup!

Bacon Wrapped Pork Medallions

My husband and I enjoyed this meal a lot! I played around with some of the spices/seasonings and it was still great. The bacon really adds a lot of flavor to this dish and I am sure it would be great with any style of bacon you have. Great for a quick and easy meal. We will be eating it again and again!

Greek Chicken Pasta

My hubby and I thought this was pretty tasty. We kept to the original recipe as much as we could. We cut serving size down to suit the 2 of us and have left overs for lunch. We didn't have a tomato on hand so we used a drained can of chopped tomatoes. Didn't add the olives as suggested but will make that change next time we make this dish. It reminds me a lot of a dish my mother makes by only adding white wine and red pepper flakes. Delicious and in the future I will try adapting a bit more.

Lighter Banana Muffins

I am so glad I tried this recipe! I have made this recipe in a variety of ways in the last 2 days! (overloaded on bananas...freezing them for easy breakfast later) I tried the straight recipe and they were like others said a little chewy but not bad, we like them. Then tried what some others said by adding an extra banana, this was much better. They turned out less chewy and more bread like. Some I have added different amounts of cinnamon, but my favorite by far are the banana with chocolate chips! Can't go wrong with these muffins. I like to play around so I am going to try adding Craisins in the next batch.

Easy Spinach Dip

This dip was fantastic. I made it for some hungry men and it was gone in minutes! I did get a few bites myself and found they guys didn't just eat it because they were hungry but because it was just that good. It was very simple to make with readily available ingredients. I loved the tomatoes mixed in and even thought it might be too much with the salsa but it was a great amount. I even added some cayenne pepper to give it a little more spice since we like that. It was great that it could all be prepared stove top. I live overseas and we don't have a full oven (really its an oversized toaster oven!). I was able to bake the main course and do this at the same time. I will be making this again and again and again!

Robbi's M&M Cookies

I love soft chewy cookies and these are not that! As many other people have said, I should have used butter. These came out so dry, not moist at all. Next time I will use butter. i am serving these cookies at a party tonight and am think about making a whole other batch because I don't want to give them to anyone else to try.

Lemon Garlic Tilapia

My husband and I both liked this very much. How could you not with butter, lemon, and garlic! A good and easy staple we can add into our cooking routine. I think it is a great base to expand on flavors as well.

Mustard Crusted Tilapia

This had a very strong flavor, a little overpowering at times. The mustard gave it quite a kick which I like a lot, but my husband decided he likes a more buttery sauce for fish. I would make it for myself but most likely will not for our dinners together.

Ninety Minute Cinnamon Rolls

Oh My Gosh! I just made these and man are they great! I didn't use all of the filling that the recipe made but other than that made it to a T. Thanks for the great recipe, I will be making them again!

Angel Chicken Pasta

This was a great meal. We did tweak the recipe a little bit. We substituted water for the white wine and added 1/4 cup Spanish black olives to the sauce. Next time I think we will add fresh mushrooms. We didn't have any on hand otherwise would have tried that addition as well. We cut the chicken into thin strips, seasoned and cooked them in a skillet, then baked with the sauce for 30 minutes instead of the 60 given. This will be a recipe we continue to use for many years. It is so easy and we usually have all of the ingredients on hand, even in Asia! Gave it 4 stars because we have had dishes we prefer better, but this is still an excellent and filling meal!
