I made several revisions to this recipe based on other reviewer's comments, as well as what I had on hand, so please consider this when reading my 3 star review (i.e. 3 stars is not for the recipe as is). I used chard instead of spinach, added bacon, used whole wheat flour instead of white, cut the butter way down to 2tbs, increased the milk to 1 1/4 cup, added a few cloves of minced garlic, Italian seasoning, and pepper, and sauteed the onions before baking. All in all, a good recipe - had a great texture, looked nice, healthy, smells good, etc. However, I probably won't make this again because as another reviewer mentioned, I found it to be a bit bland (even after all of the enhancements). If I were to make it again, I would take the suggestion of increasing the salt or using a saltier/more flavorful cheese like feta instead of mozzarella. EDIT: I came back and added an additional star because my boyfriend liked these a lot.
