Sweet Zucchini Relish

Reviewed: Aug. 31, 2010
I reduced the sugar by half and doubled the remaining ingredients. It came out perfect and everyone raves over how good this is and it still taste sweet. I did not have pickling salt so I used a good (Eden brand) sea salt, worked great and did not turn the zucchini brown.

Best Brownies

I failed to melt the butter in the beginning, as instructed, but I did have soft butter and they still turned out very good. The only change I made was I doubled the recipe and put in 1 3/4 C organic cane sugar and about 1/4-1/2 C organic mayonnaise (for added moisture). Everyone gobbled them up and said this was a "keeper" recipe! Thanks for sharing this recipe Angie!

Sweet Potato Pound Cake

Reviewed: Nov. 21, 2009
This is a great recipe. I made it the first time by following the recipe to a tee but using organic ingredients where possible and it was super although I did not have to cook mine near as long as directed. I then made it a second time with the following changes: I used only 1 cup of organic cane sugar instead of the 2 cups of white sugar. I used 1 Tbsp. madagascar vanilla instead of 1 teaspoon. I used 2 and 3/4 cups of King Arthur White-Wheat Flour. I also added 1/4 cup mayonnaise at the end. I baked this at 350 degrees for 1 hour. For the glaze I did the following 1 cup organic powdered sugar 1 Tbsp. soft amish butter 2 Tbsp. pineapple, coconut juice with no sugar added and 100% natural 1 Tbsp. grated orange zest It came out just as good with the reduced sugar and the pineapple/coconut glaze was really good. This is really a great cake with lots of opportunity for different flavors. Thanks for sharing Anne!

Grandmother's Buttermilk Cornbread

Reviewed: Jan. 26, 2009
I chose this recipe because the ratings have been very good. I am very happy that I made this recipe! Thank you for sharing the recipe. Since I am a diabetic I had to reduce the sugar to 1/3 cup and I also used organic yellow cornmeal, King Arthur white wheat flour and organic buttermilk powder with water (use 4 Tbsp. plus 1 cup of water) and the cornbread came out really, really good.

Bananas 'N' Cream Bundt Cake

Reviewed: Jan. 24, 2009
Are you serious? This recipe is fabulous! I used as many organic ingredients as possible and used Amish butter instead of shortening but other than that no other changes to the recipe. I fixed them like muffins and they came out super moist and super yummy!
