Microwave Corn-on-the-Cob in the Husk

Original Homemade Italian Beef

This is by far the best Italian beef and the recipe I use. I do tweak it by adding very thinly sliced onion and several cloves of crushed garlic. I also add 1 1/2 cups of beef broth for lots of juicy goodness for the buns to soak up.

Spinach Basil Pesto

I don't know what I did wrong with this recipe. I used fresh homegrown basil, toasted the pine nuts and just followed the recipe. Neither my husband nor I cared for it. BTW, I do like pesto.....in the jar.

Fake Sukiyaki

This was extremely bland and soupy, and I added 2 garlic cloves as well as tomatoes for extra flavor. Absolutely no 'asian' taste at all, just beef and spinach soup. I won't make this again.

Chicken, Asparagus, and Mushroom Skillet

What a great starter recipe! Can't give it a 5 star because I didn't have exactly these ingredients. I used the fresh herbs I had available which were basil, rosemary and oregano. Didn't have fresh asparagus or mushrooms, so used canned. Smelled fabulous cooking! I served over gnocchi, with a salad dressed with red wine vinegar and garlic infused olive oil. It felt like we were right back in Italy!

Slow Cooker Italian Beef

I'm giving this 4 stars as is. I used 'zesty' salad dressing mix, because we like things a bit spicier, also added some thinly sliced onions and a couple of cloves of garlic. Then it was 5 stars! This also works well with a pot roast for 6 hours on high or 8 hours on low.

Slow Cooker Cranberry Pork

Hmm, I'm sorry I don't understand all the rave reviews. I used the suggestions, salt, pepper, garlic, even pepper flakes. I'm an experienced cook. I just didn't think it was all that terrific and either did my husband. There so many better ways to prepare pork. It wasn't bad, it just wasn't very good either.

Chicken Soup With Pasta and White Beans

This was surprisingly delicious and very authentic tasting. I just changed a couple of things. I started with chicken broth in a box, used 'Italian' tomatoes with garlic, basil and onions and tossed in a can of chunk chicken white meat. Also added some garlic. A great emergency meal from the cupboard.

Sausage Coddle

We found this recipe to be a HUGE disappointment and a waste of Guiness. I couldn't even tweak it into tasting good. The broth must be thickened or it's just soup, and the flavor left a lot to be desired. Maybe it's because I love the Coddle at Gogarty's in Dublin, nothing else will ever be good to me?

Donna's Nest Eggs

I haven't tried it yet, but I certainly intend to. This sounds like a great way to simulate 'scotch eggs' that I can find only at our local renaissance fair. And no deep frying necessary! BTW, they serve them with a country gravy or cheese sauce. I like mine with whole seed mustard.

Individual Beef Wellingtons

This was very good. I substituted white wine for red, since that's what I had, and slipped some Irish gouda cheese into the packet. Even 18 minutes was too long, the beef was medium well, NOT my favorite. Next time, and I will make it again, It will be in the oven only for 12 minutes for medium rare.

Mushroom Pork Chops

I too, have been making this for years in the oven. Peel and slice a 3-4 potatoes, mix the cream of mushroom soup with a little milk, reserve about 1/4 cup to top the pork chops. Stir in the rest with the potatoes, put the pork chops on top of potatoes, top with remaining mushroom soup, cover with foil and bake 325 for about an hour. I usually put in some poultry seasoning or garlic to make it a bit more flavorful.

Fruitcake Cookies

These cookies tasted fantastic. However, there was something wrong with the chemistry. They spread horribly, stuck to the pan, tore part on removal. More flour just made them taste flour-ey, and refrigerating the dough did not help. They compressed on storage and I had to throw them out. Pity, because they were tasty.

Mom's Pumpkin Pie

To make it extra rich, I use half and half for all the liquid. I don't bother straining my homemade pumpkin puree for lumps. The texture adds to the homemade quality.

Ham Bone Soup

I do not use a crock pot so just made it on the stove. I also added garlic and a bay leaf, carrots and celery. Next time may add even more veggies, such as corn and green beans. It really was delicious, a nice blend of flavors.
