Beautiful Salad

This recipe has been around for years and years - and I'm glad this cook put her own twist on it and posted it here! :) It's one of my favs - so simple and easy. I've also used both pecans & walnuts (candied, peppered, & otherwise!)

Orzo and Tomato Salad with Feta Cheese

I followed the recipe, as written, and it was...okay. My family all tried it and decided it was a bit too dry and bland for us. I'm glad others like it, though, as it does sound good!

Potato Pizza Casserole

Well, on the plus side, the recipe is well written and explained (bonus for spelling, too! :). On the negative side (and I followed the recipe, as is), no one went back for seconds. This wasn't a winner in my family. They said it was "ok...and it was ok if I did NOT make it again." I love one pot casseroles but I think it was a bit to bland/uninteresting for us.

Runzas (meat pies)

I was first introduced to these by some very 'adventurous' lunch ladies in elementary school (1060's). While they take a while to make, they are SO worth the effort (and they freeze very well - but are best right out of the oven). I've been making them for years and this is the only recipe I've ever used (haven't even tried the 'frozen bread dough' version and, probably, won't - the dough recipe for this is wonderful!). Over the years the only change I've made is to add a slice of American cheese (put it in the center of the rolled out dough and put the filling on top so the cheese melts down into the filling - make sure to secure the edges really well or they might leak). Thanks for posting this recipe - I, highly, recommend trying it - especially for those who are "cabbage weary" - it's delicious!

World's Best Lasagna

I thought it was delicious! (My picky husband said "tastes like lasagna..." lol!). The only thing I changed was to use vegetarian sausage (and, of course, vegetarian cheeses!). Other than that, I followed the recipe and was happy with the way it turned out - and I don't think it took all that long! Thanks for posting this & keep 'em coming!

Vegetarian Meatloaf

Please make sure that, if you really want a 'vegetarian' dish, make sure that the Parmesan is actually vegetarian (MOST CHEESES ARE NOT VEGETARIAN). That aside, this wasn't too bad with a few substitutes (I used reconstituted TVP instead of the more expensive crumbles), left out the parmemsan, and bell pepper (nothing wrong w/bell pepper - I don't care for it :).

Herb Biscuit Loaf

Okay, I'm sold! These were so yummy! I didn't have the caraway but followed the recipe on everything else (not that there's a lot -so easy!) and was very surprised on how good these were. They don't even need buttering! I also think it helped that I baked them in a glass pan as it made the bottoms nice and brown and crisp. Thanks for posting this! I will be making these again!

Creamy Veggie Fondue

My husband wouldn't eat it, at all, and I didn't really care for it too much. I believe it was the combination of cheeses with the wine -- beer might be a better choice. On the plus side, the consistency was thin, but okay, and it was quite simple to make. I don't think I'll make this again or, if I do, will change the wine to beer and leave out the Jack.

Leftover Turkey Cheesecake

This recipe is the best part of Thanksgiving dinner (or any other day!). We love it. The only thing I do differently is, after it's cooked, add some warmed gravy over the top (the stuffing always comes out a little dry, anyway -- and who doesn't like a little extra gravy?). Thanks for sharing this recipe!

Butternut Squash Bake

Very good - I left out the cheese (I couldn't find vegetarian bleu cheese...and yes, not all cheese is vegetarian! ;) but, otherwise, made it as stated and was happy with it. I mashed it up and mixed with some basmati rice. Yum!

Make Ahead Lunch Wraps

I had to substitute (only due to what I had on hand) and add a few more spices (the flavor was good but, for us, needed "more") but, overall this is a very good recipe. I scaled it to make 4 burritos and used 1/2 of the black beans and double the amount of what was called for the pinto beans using refried beans instead. I added cilatro paste & cumin to the rice, and also included chopped onions and black olives to the mixture. Then I made them into burritos and put them in a pan and poured a can of green chili enchilada sauce over them then topped that with another 1/2 cup of cheddar and baked it about 30 minutes at 350F (or until the cheese was bubbly). It was great. I will, absolutely, make this recipe again and thank you for posting it!

Special Irish Beef Stew

I was excited about all the positive reviews for this and I wanted to try something different for a 'special' dinner. I followed the recipe (but used a milder beer, per a few of the other reviewers suggestion) but it was pretty bad. There was a very bitter aftertaste that permeated the vegetables - nothing was salvageable and we ended up doing take-out. 2 stars for creativity, ease of preparation, and spelling, though! ;)

Chocolate Mousse Cake IV

This is really a very good cake recipe! I do not like frosting AT ALL (to the point of scraping it off the cake) and this mousse "frosting" is a great alternative -- it's rich and chocolatey without being too much. I took some other peoples advice and used 1/3 C. water instead of 1/2 and made 2 square 1-layer cakes instead of 1 frosted layer (after reading the "sliding" issue, I thought this would be good -- plus I can take 1 cake to the dinner and keep 1 for our family!). I would recommend this for any chocolate lover (and I can see so many possibilities for this using different flavored cakes -- amaretto, cinnamon, orange, etc.). Thanks for the recipe!

Cheesy Beef and Bean Bake

I have to be honest here...when I looked at the ingredients all I could think of was "yuk." BUT, I read the great reviews and needed something relatively quick for dinner, so I tried it. I apologize for anything 'bad' I ever thought about this! It's really, really good! You can't tell there are beans in it (for those of you who, like me, who "yukked" at that part) and my husband, who's a little picky but a good sport about 'new recipes' loved it, too. (He went back for 3rds that night and took the rest for lunch the next day!). It's very filling, too. The only changes were that I made my own mashed (garden) potatoes, used the canned sloppy joe sauce instead of the tomato sauce and, being a vegetarian, I used the veggie version of the ground beef. I will make this again, for sure - no "yuks" this time!
